During the holidays, I pretty much make a panattone for every person I know, since it is a thoughtful (or at least I think it's thoughtful) gift that is easy to give essentially everyone. Getting paper molds that aren't super expensive though, can be a bit difficult, so I am glad I landed on this one.The paper molds, in addition to obviously working well, look fairly premium, like what you'd expect from the Italian ones that you get at the store that are imported. The size is fairly standard for a panettone as well and is neither "jumbo" or "tiny" - which essentially means that it works perfectly for pretty much any recipe you will find online. When I baked the panettone, one of them got slightly discolored, but otherwise they held up very nicely and were honestly beautiful to look at afterwards. Everything baked through, so there wasn't any heat resistance from the molds themselves, which was good. Overall I am quite satisfied with this set.
These came in a bag in a box. There was a little damage to the top of the papers, but it was still completely sealed. The folded over and crumpled top layer made it a little difficult to get the initial few out, but after that it was no different than cupcake liners. I did grease the bottoms of the paper panettone before filling them with some sugar-dense quickbreads. I probably should have lightly greased the sides, as well. They didn't release as well as I was hoping - not horrible, but definitely an oversight on my part. I put the volume of about 1.25 cups of batter in two of the molds and about 2.5 cups in the rest. I wasn't sure how much the initial oven spring was going to make the mildly leavened quickbreads climb the sides, but it worked out well with both amounts. You can fit six on a half sheet tray without issue. I would put some parchment down underneath them if you are baking them on a tray. There wasn't any batter leakage, but the condensation from the bread causes the bottom of the paper to fuse to the pan.The molds that I filled with 1.25 cups, conveniently fit in a quart size freezer bag after baking. The 2.5 cup loaves fit with a little creative reshaping, but I would avoid trying to do that. Someone may be getting a broken loaf of pumpkin bread this year...For about $0.30 a piece, these are a good quality for the price. I will definitely get these again for holiday treats when I run out!
