This mini loaf pan is like the Ferrari of loaf pans!
These mini bread loaf pans are so well engineered, you literally cannot get a better loaf pan than these. All the surfaces are coated in some kind of nonstick, so opening and closing the lid feels sooo smooth that you forget to feel guilty because it doesn't even feel anything like metal-on-metal abrasion should.There is a small hole on the bottom to prevent air from being trapped between the dough and the bottom of the pan during the final proof. This also prevents pockets/large bubbles of trapped air that pevent the dough from making contact with the metal. Because air is allowed to escape as the dough expands, the dough can fit the corners perfectly for those sharp edges on a loaf! The hole also breaks any vacuum suction that might form after the baking, allowing the loaf to slide out easily!All the walls are corrugated, not only to give it a high-end look, but to increase the structural integrity and prevent it from warping or bowing during baking. There is also more surface area over a completely flat surface, which improves the heat distribution and prevents hotspots. The ripples can also reduce the surface contact area between the bread and the pan, making it easier to remove loafs. Finally, the corrugated design allows for slightly better air circulation around the dough -- however this benefit (imho) is mostly theoretical.You may be wondering why the size is so odd, why not just have a perfect cube with all the sides being 4" or 5", rather than 4.5" x 5" x 4.5"? This is also a thoughtful feature - If the pan were a perfect cube the center of the dough would be significantly further from the heat source (the metal walls) than the edges.By making the pan slightly narrower or shorter in one dimension, heat reaches the core of the loaf more efficiently. In a perfect cube, you risk the outside of the bread burning or becoming too thick and "crusty" before the very center is fully baked.Furthermore, the 0.5" difference in dimensions provides a specific volume-to-pressure ratio.As the dough rises and hits the lid, the slight rectangularity helps the gases distribute more evenly. In a perfect cube, the pressure would be identical in every direction, which can sometimes lead to "compacted" spots in the crumb where the dough doesn't expand properly before being trapped by the lid.As all the surfaces are nonstick, this thing is a BREEZE to clean, just wipe it down with a sponge (not the scrubber side!). If a stray piece of batter or dough is stuck you can just scrape it off with your finger.Finally, if you need any ideas on what to make with these amazing pans other than a standard cube loaf, look up a Youtube video called "Unbelievable!! Attractive size, non stick, nicely made
So far I've used these 3 times, I made regular sourdough loaves, cinnamon swirl loaves and pound cake in them. I've been happy with the results so far.Getting the amount of dough needed to actually make the full pan a true Pullman style is what I'm working on, all of mine were not enough so I'll be adjusting that. They hold more than they look like they will, I did ~430g , ~500g and ~520g for each and none rose to the full top.The pans are non stick and for the breads that worked great. I was nervous about the cake though, I put a small piece of parchment in the bottom as there is a vent hole and I did use baking spray on one. The one without the spray did get stuck in one corner. So for more delicate bakes I would still take the precaution of greasing it, but for the breads no need.The pans are an attractive color and the lids slide on and off easily. No sharp edges or issues that I noticed. Lightweight but sturdy . The steel metal seems quality and on par with other good quality cake/bread pans I have.I like the size. They are perfect for smaller portions for smaller families and to give away or try new flavors with. I'm enjoying having these and think they're a fun addition to the baking collection. Quick Clean Releasing Pans
I made cinnamon raisin bread in these early this week which has already disappeared. I love the size of these that allowed me to split my normal recipe into two parts so that I was able to send a little loaf to my daughter and her family. In hindsight I need to slightly increase the ingredient base to get a perfectly square loaf but that's on me, not the pans. These are of a quality comparable to my pullman pan from a widely known baking site that cost four times the price of these so this is, in my opinion as a baker, a great value for the money. The loaves fell right out of the pan cleanly after baking so removal is a snap. The loaves you see here were a recipe for an 8.5 inch x 4 inch loaf pan and I cut the dough in half after the first hour's rise so baking capacity would be a bit over half a pound per loaf I think, I'm not the best at math. I know, I know, baking is math but so is quilting and I also manage to do that while still feeling that I'm a bit of a math dummy. The baking time on these loaves was right at 35 minutes at 375 degrees in an oven that was preheated for 20 minutes. I love the squared shape of these loaves with the little domed top, my daughter said the one I sent her was cute. Overall I'm well pleased with these pans and they will be in heavy rotation in my baking routine.
