The size is just the perfect size for everyday use as it is so comfortable in the hand. The weight is well balanced and holds a sharp edge wgen sharpened. The colors are gorgeous and looks good on my kife holder.

I was genuinely impressed with the sharpness on the blade out of the box. And the wood handle was quite nice in the hand, with proper indexing.
I am so happy that I ordered this knife. It’s not heavy as some knives can be. My hand and arm didn’t get fatigued while I was using it either. The blade is super sharp and cut/chopped through everything with very little effort. If you do a lot of cooking which requires a lot of prep work like chopping and cutting like myself this knife will be your new favorite kitchen knife.
This is one of the most beautiful knives I have ever come across, one of the reviews here actually sold me on it, there are actually no reviews on a Kiritsuke knife of this particular length, only the full 8 plus length, so I watched all of those and saw how detailed you can get with these knives, the tip especially and how you also must be careful not to drive the tip into the cutting board or you could snap it off, so while waiting for mine to arrive, I continued to watch others use it and care for it, when I received mine I was just in awe, it is just so beautiful!! I cut some onions, garlic and peppers with it last night, and I used the tip for some detailed work and all I can say is WOW, It really does that nice detail that I saw in the videos, it can do some extreme and I do mean EXTREMELY skinny strips of onion/pepper and this knife will put an actual garlic mincer to shame. All I can say is, GET THIS KNIFE!! I love the 5" size of it, I really do, it is easy to handle, I may get a full size in the future, but I am enjoying this so much!! Just like I prefer a 5.5 in chef's knife rather than a full size 8", this knife is for me!
YES !!! This Kitory 5.5” Kiritsuke chef knife is everything I dreamed of in one short knife. Every detail of this knife SCREAMS flawless ultimate quality! The handle fits my hand perfectly, especially with the finger grooves, and is machined as smooth as silk. The 5.5” blade length is perfect for short knife work. The weight and balance of this knife is beyond my wildest expectations for my comfort and, feeling like it's an extension of my arm that I was born with.The hammered dimpling on the blade "releases" every type of food that I gently stroke through with no sticking whatsoever. And sharpness ?!? Oh my! Beef, tomatoes, onions, celery and a hard baguette that I stroked through for my first use felt like THEY WEREN'T EVEN THERE! Thank you, Kitory !!!
And that’s not a bad thing. I’m used to Asian-style vegetable knives/cleavers/nakiris that use the light and thin and super-sharp method.This one feels much more like a small meat cleaver to me. And it’s great. One use in a commercial kitchen and it’s in permanent knife roll.Plenty sharp, feels good, balanced, and at this price, it’s a fine addition for a part time cook like me.

Maintaining it meticulously, I never neglect to wash, dry, and store it in a hemp case. While I've only sharpened it once, attributing the need to others mishandling it, its performance remains exceptional. With a delicately thin blade and a well-crafted edge, it effortlessly slices through ingredients. Though the handle leans towards the heavier side, it offers a sturdy balance that doesn't induce fatigue during prolonged use. Overall, an outstanding investment for culinary enthusiasts.
