Wish I had these knives sooner

I am no knife expert but these knives have made my life so much easier in the kitchen. They are super sharp, grip feels safe and comfortable in my hand, and they look beautiful displayed on my magnetic knife block. I no longer dread the task of chopping because it’s a breeze with these knives. The santoku knife cut through a butternut squash with ease! This is an heirloom gift quality set of knives. they work great, and you will not be disappointed.

I had never heard of this brand Fintiso before, but I saw them on vine. I got these for my mom to use at their lake house, as I noticed when I stay there she had a bunch of dulled knives in the drawer. She does a lot of cooking and baking, and I wanted her to have some truly nice knives. I was not disappointed with these. She doesn't get excited about a lot of stuff, but when she got a chance to actually use these, she was noticeably impressed with them. It didn't hurt that the first thing she did with was to peel sweet potatoes for baking them. The thing about sweet potatoes is they are very tough, not nearly as much moisture as say a potato, so it is a really tough job to peel them well, and while she has some ok knives, she said this was the first time she can remember doing that task in which it wasn't a pain to do. She was so happy to have just gone through that job with no slips and nicely peeled sweet potatoes. In her words, it was just so much easier to do when the blade slides through with confidence, compared with lightweight blades. She used the larger knife for that purpose, instead of the paring knife. She said it was the best job she's ever done on those. These knives are sharp and heavy and make very sure cuts. My mom was really impressed with how they worked on that job, and that was worth it alone for that.These are kind of that Japanese style blades, and they say they are 5 layer steel, which I have no reason to doubt, and they were a little different for her to use, but it didn't seem to bother her at all. I don't do a lot of the cooking when I am there, but what I noticed is that I really liked the paring knife. I don't know why knife sets don't all have 3-4 different paring knives, but this is one is strong enough and has enough size that it has pretty good utility. That is a beautiful little knife for general kitchen tasks, which is mostly the kind of things I do if I am there. But it is clear from how she uses them it is a very welcome upgrade over her drawer knives. lol. One of the first things she told me was that she didn't trust them out for anyone to use, so when she gets done with them, she cleans them up and puts them back in the nice box box they came in so nobody throws them in a drawer. I normally would want to see if they are dishwasher safe, but she is unwilling to let me try that, even with the paring knife. She's probably right.Is there anything I don't like? Eh, not really. The blue isn't my favorite color, as I am kind of a traditionalist about wood, but you can't fault how nicely they made the handles. My mom doesn't mind at all, and they are nice sure handles. She thought the blade shapes were very interesting as well, as she has never had any that looked like that. This was almost like giving a gift to my mom, although I can use them when I am there, (if she will let me!) She loves them, and took special possession immediately. lol. I am happy though, I am always happy to find something that she still takes that kind of joy in using, so this is a first rate acquisition as far as I am concerned. The blade material is very good, I have seen personally one set of knives that might be better, but these are right up there.
