I have to say that this is the best chef knife I have ever owned. The 9CR18MOV high carbon clad steel forged blade is much harder and tougher than stainless steel and will retain it's cutting edge much longer. The fitment between the handle and tang fits perfectly without gaps between the parts. The weight is a touch blade heavy which I like very much. The cutting edge is razor sharp and its thin blade makes cutting nearly effortless. I've told all of my friends and family about this knife and several of them have purchased this knife and the steak knives as well. The box the knife ships in is even a quality box as well. I'm going to be adding a set of your steak knives soon.
This knife will definitely impress right out of the box. I use to go to a local knife guy and he recommended purchasing knives that are manufactured from a single tang. He said knives back in the day use to be made that way (if you have an older twin henckles or wustoff look at from the tip of the knife to the handle) and not how they’re made now where it stops and is attached separately from the handle. He said that’s the cheaper, less expensive way to manufacture knives. I have several of those knives that I hold onto and get them sharpened and am always on the lookout for quality knives on the lower price point. This knife did not disappoint. After washing and drying I cut the wrapper to some ground turkey and it cut it so well that I was looking for other things to cut. I cut carrots as if they were cooked (they were raw) and celery was cut through every fiber of its stalk (you know what I’m talking about when you cut celery and a dull knife doesn’t cut through and it hangs together like an accordion!). It comes with a sheath for storage which is convenient because my current knife block won’t accommodate this knife.
Was pleasantly surprised by this knife.The construction is super solid. The handle is comfortable and riveted to a full tang with decorative details in the middle rivets. The blade is advertised as high carbon stainless steel and I am not sure what that means. High carbon steel is ideal for chefs because it is readily sharpened to a fine edge while stainless can be better for the casual cook because it is cosmetically easier to take care of. Regardless, the blade is sharpened to 10 degrees and if you have a knife sharpener use the Japanese knives setting rather than the general setting in order to keep the fine edge.The knife feels good in the hand, solid but not too heavy. I will likely replace my current chef knife with this.
First off, I love the handle on this knife. I actually like the general shape better than my Wüsthof Classic, with the note that this one is just a hair wider than a perfect handle. Still, it feels very stable in the hand and in use.I picked this up as a backup and for my wife to use instead of my Wüsthofs. So far I'd put the quality pretty close to Dalstrong's basic stuff just in finish and feel. I love the look of the blade, it's nice to see the layers of steel.I was able to easily filet a salmon with it. I was surprised and impressed at the ease with which it did the work. I didn't feel like I had to do any extra work, which is great! It's really quite sharp. I was also able to get some extremely thin slices out of an onion. The cutting is really effortless so very pleased there.I hope it holds up well, but I am considering some sharpening stones for knife maintenance anyway.All in all, absolutely can't complain for the price.
I'm not a chef nor do I cook at home as my wife does the cooking. But we needed a new knife. After consulting with my friend who's a professional sushi chef, we got this.This Japanese styled knife comes in a nice gift box. It includes a cheap plastic sheath but it works. The weight in hand feels very well balanced and the handle conforms to my hand nicely. I'm not sure what the handle is made of but it looks like wood but definitely is not. If I had to guess, I'll say it's a high quality plastic. The rivets in the handle is decorative and looks great. The blade is described as 9 layered carbon steel. I can't tell and I doubt you'll find that in a knife at this price. My sushi chef friend said his knife was 10 times the price. If you look at the blade at an angle, you can definitely see multiple layers. But that could be just molded into the steel. My friend examined it and was impressed for the price.I decided to try the paper cutting test, cutting a double sided shipping label. It didn't stand a chance! Since then, my wife has used it to cut meat and veggies and she thought it was the best knife she's used yet! Overall, I'm sure this doesn't compare to a real $300 Japanese knife but it gets the job done and would be great in the average kitchen 😀
This knife is slightly larger than the standard 8” Chef’s knife. It is a full tang design that feels good in the hand. It is very sharp out the box. It is a good-looking knife to be sure. It comes in a nice box and it does come with a knife guard. I would have liked the knife guard to be of better quality and a little longer but that is what came with it and it does not change how the knife feels or cuts. The blade it self has a nice look presumably from the 9 layers of High-Carbon steel. The price is not bad when compared to the good quality name brands you see in better stores. I am satisfied that this knife will last a long time and provide good clean cuts each time.
