Good quality pans
These are quality pans however the 11 inch pan's bottom is not perfectly flat so causes an issue with some stove cooking surface designs. The 9.5 and 8 inch version have flat bottoms.They have excellent heft to them, you feel like you have a quality pan in your grasp. After using mine for a few weeks cooking eggs and chicken, they do a good job in the non stick department and clean up nicely.The pan information that is easy to miss states, do not clean in the dish washer. To me, quality cookware shouldn't be cleaned in the dishwasher anyway!I only use avocado oil, it's healthy and has a high smoke/burn temperature quality.There are only two of us (seniors) so I bought the 11 inch pan first because I felt it would be the most practical for our cooking needs and that has been true. After being impressed with the 11 inch, I purchased the 9.5 inch and then the 8 inch to complete the set.The pan comes un-assembled to keep the shipping box from China as low as possible. Box size and weight figure in shipping costs so the smaller the better yet still protect the merchandize inside. The handle mounting holes seem way to big at first glance but there is good reason for that design. The nuts that secure the handle have a shoulder or step design. That step or shoulder makes for a more secure attachment to the studs welded to the pan. When the nuts are tightened, it makes for a very solid handle to pan assembly. Quite brilliant and simple!If I were to buy only one pan, it would be the 11 inch version. Even when frying something small, the extra room in the pan makes it easier to slide the spatula under the food to flip it or remove it.It was high time to replace my old and damaged fry pans and feel I made a good choice with these.
