A filet knife doing its job well for a fair price

A nice looking knife that starts out sharp and handles well. I have used it frequently over the last several weeks without problem. I have taken steel to it as it was becoming more difficult to slice tomatoes and limes - not really in the job description of a filet knife. It came around nicely. I believe it is a good value based upon price, construction and the easy ability to hone the blade with just a few strokes.

This should be five stars!

Curious title, right? I’ll get to that below. I own a bunch of fillet knives of various levels of quality. I recently flipped my kayak on a fishing trip (don’t ask how) and in the process I lost TWO of my favorite fillet knives (a Rapala and a Cutco Fisherman’s Solution). I ordered this Albert and Grace as a replacement for the Rapala thinking I would get a weak, somewhat dull, but passable replacement. I’m delighted to report that I was completely wrong. The Albert and Grace has a beautiful Pakkawood handle that is sanded silky smooth and cleanly riveted to the full tang. The bolster adds both balance and a barrier to bacteria build up where the blade meets the handle (compare to my two knife-block fillet knives in the photo). The curvature, thin tip, and slight flex of the blade is perfect for the trout and salmon I most frequently fillet. And, of course, none of that would be possible if the knife was not very sharp. I tested the Albert and Grace straight out of the box and had no problem shaving paper (see pics). I then used the knife to shave a bit of hair off my forearm (don’t try this if you don’t know what you’re doing). You can see in my photo that the knife cleanly shaved the hair. Wow! And all this for ~$10. Un-freaking-believable! I would have given this knife a five-star rating but for the fact that there is no sheath. If I’m going to carry it out in the field, I need to keep it in a sheath while it is in my tackle box, in a bucket, or on my boat. For the time being, I’m going to keep it in one of my knife blocks in the kitchen and work on making or finding a sheath for the field. I highly recommend this knife for the combination of price and quality.
