Perfect Book Cake
For my monthly book group gathering, I made a carrot cake in the shape of a book! This was the first time I had tried a cake mold - it needed to be baked over a pan of water to ensure that the inside got done enough without the edges getting too dry. I also generously greased the pan so that the cake would not stick. The surface indentations (indicating pages) were not very noticeable, but I intensified the lines using cream cheese frosting. This was also the first time I experimented with fondant - it was easy, except that the fondant tends to stretch, so it is tricky to get even edges. But the cake turned out moist and delicious!
