This knife is a nakiri (or nakiri bōchō), or vegetable cleaver. Nakiri's have a double-beveled edge on their blades, unlike some Japanese knives, which means it should be easier to use by left-handed people.How I tested:The knife came well packaged and protected. The knife is double-boxed and then shipped within an Amazon box. The knife itself is shipped with two edge guards (see photo) to protect the blade. The package comes with the usual instructions on care (wash before first use and after each use, dry immediately, do not put away wet) and a knife sheath, which should protect the knife during storage if properly used.The knife is extremely well balanced and has the proper weight distribution to make vegetable prep quite easy. The edge is extremely sharp as shipped.Slicing and chopping:I first tried the knife by slicing tomatoes. I started with a normal "burger" type slice, then progressively sliced thinner and thinner until I was slicing paper-thin tomato slices. No issues at all, it was quite fun in fact. I moved on to chopping Maui sweet onions, and the knife made quick work of those. That was followed by celery and then carrots. Each were easy and fast to work with. I did not test this knife on meat as that is not its primary purpose, though I believe it could adequately chop most meats.Clean up: Hand wash only, as with almost every good quality knife there is. I dried the knife, put it in its sheath, and put it away. It'll be a valued part of the kitchen for many years, I'm sure.I'll update this review after a few weeks of use to provide information on how the knife holds its edge and the ease of sharpening.
I have a lot of knives in my kitchen, but this is the one I am consistently reaching for every time I need to cut something. It is comfortable in the hand and well balanced. The size works for just about any meal prep I need to do. The knife is sharp enough to handle most cutting tasks and looks great as well. I am an experienced home cook and have been preparing meals for my family for over 30 years. This is one of the better knives I've had in my arsenal over that entire time.
I've never used a Nakiri knife or any other Japanese style knife before. I’m just more accustomed to using German style chef's knife. My good knife is a classic Zwilling Henckel’s four star chef's knife, but I have been considering buying a second high quality knife so I don't have to wash in between my meat and veggies when I'm prepping food. So when this Nakiri knife popped up on Vine I jumped on it. When it arrived I just so happened to be making the base for a soup and within five minutes of its arrival I gave it a quick wash and started chopping up onions, carrots and celery. It will take a while to get used to using more of a chopping motion than rocking back and forth like I do with a chef's knife, but this really is a great vegetable knife. It sliced through a huge Spanish onion like it was a ripe banana. I zinged through the carrots and celery, then cut some extras into matchsticks for my kids' lunches with ease. It is very well balanced and I felt in complete control of it in my hand. The stainless steel is shiny and it's in a very nice gift box if you plan on gifting it. Compared to my Henkel's knife the quality is the same without the price premium for the name brand. I highly recommend.
I really enjoyed this blade! I tested it initially on a watermelon—it worked well, though it struggled a bit more than I expected with the rind. The handle felt comfortable in my hand, and I appreciated the decorative touch on the center rivet.The packaging was impressive. I genuinely enjoyed the unboxing experience—it gave off a strong sense of quality. I also appreciated the included lined cover, which makes it easy and safe to store in a drawer.Overall, I’m very happy with this blade!
