Awesome knife!
I got the first knife and was really excited about it but when I opened it, the tip was bent 90 degrees!!! I was like you have to be joking… I think someone did that, returned it and they just didn’t check. The tip protector was split in half and rolling around in the box, but the knife wasn’t loose… anyway, I returned it and they sent me a new one within 48 hours. This knife is GREAT! It is razor sharp, very comfortable, weight is perfect and contour of handle is perfect. It’s held a solid edge for a while now, but after a few weeks of daily and fairly moderate use I have had to sharpen it a little bit, but this knife is awesome. The price isn’t too bad for this quality. Definitely a solid product with a good chef associated with it!

A Big Part Of The Price Is The Name
Let me start by saying that this is a great knife. It arrives sharp, it's a full tang construction, and it is well made. The quality is not the reason for my rating. I'm just stuck on the price. $65 for a 4" pairing knife puts this way above some very recognized, tried and true brands out there. And a big part of what you are paying for is Jose Andres' namesake. This is not a hand crafted piece of art (I realize that would cost way more). This is a mass produced knife. And for a knife that costs as much as it does for what you get, the packaging is awful. The box was a flimsy, battered mess when it showed up to my home. I've seen knifes that cost less than half packaged way nicer and with more care. Now that I'm done ranting about the price, I'll admit that this knife feels very nice. It fits well in your hand and is comfortable for all the standard things you will do in the kitchen with a pairing knife. As I mentioned, it does arrive with a very sharp and well honed edge. It peels with ease and glides through just about anything you throw at it. In addition to feeling nice and performing well, it's also a very nice looking knife. My issue is not with the quality. The quality is great. But if this was a knife that didn't have a 2 star Michelin chef's name on it, you would probably pay $35-40 at most. So my rating of four stars is based solely on the poor value and not the quality of the knife. If you are a massive Jose Andres fan and don't mind paying the tribute for a product that bears his name, then go for it. If you are just looking for a quality pairing knife to get the job done, then there are an almost endless sea of options that will perform on par with this knife and save you a lot of money.

Standing Ovation for This Great Bread Knife - Great Size (A little smaller than most)
If a knife could earn a standing ovation, this one would be taking a bow in my kitchen right now. This is, without a doubt, an absolutely stunning and incredibly high-quality bread knife — and it doesn’t just stop at bread. This little marvel slices through just about anything you put in front of it, doing it with such ease and grace that I half expect it to start charging admission.Let’s start with the bread — oh, the bread! Crusty Italian loaves, which normally require the brute strength of a lumberjack and the patience of a saint, are no match for this knife. It glides through the crust and the tender, airy interior like it’s slicing warm butter. And don’t get me started on tomatoes — notoriously squishy, rebellious little things that usually squish, split, or downright insult your efforts with a lesser knife. With this beauty, the blade slips through ripe tomatoes like a whisper. No resistance, no sad, crushed slices — just perfect, glorious cuts that look like they came out of a cooking show. The blade itself holds an edge remarkably well. Honestly, it’s like it refuses to acknowledge the laws of physics and wear and tear. I wasn’t familiar with NITRUM® Stainless Steel before, but after using this knife, I’m ready to carve its name into a mountain. Not only does it perform brilliantly, but it keeps its sleek, polished look day after day, even after tackling sourdoughs, baguettes, cakes, and yes, even the occasional watermelon that wandered too close to the cutting board. For years, I limped along with a budget bread knife — bless its little heart — and I didn’t realize just how much slicing could be enjoyable until I got my hands on this masterpiece. It’s like trading in a dusty old tricycle for a luxury sports car. Now, slicing bread is no longer a chore; it's an event. (I’m not saying we’ve started eating more bread just to use the knife, but…I’m also not not saying it.)Another huge plus: it fits perfectly into my knife block where the old one sat awkwardly like a gangly teenager. And with the bamboo construction protecting the entire blade, I don’t have to worry about dulling that beautiful edge or risking the horrors of chipped serrations. The length is the unsung hero here too. At a perfect 8 inches, it’s long enough to tackle the biggest loaf in the bakery, but not so unwieldy that it feels like I’m wielding a pirate’s cutlass. (Looking at you, old 12-inch bread sword…)In short: if you’ve been yearning for a top-notch bread (and everything else) knife that makes every slice feel like a small celebration, this is your answer. It’s sharp, stylish, dependable — and dare I say — even a little inspiring. If a kitchen tool can bring happiness, this one absolutely does.Highly recommended. Bonus points if you start naming your bread loaves just so you can ceremoniously slice them.
