My only responsibility was… not cutting myself.

This was a great knife for someone like me who honestly had no idea what they were doing. I watched a couple of YouTube videos that said this was the kind of knife I needed, so I went for it.I used it to cut down a big block of stew meat from Costco, and what really impressed me was how the meat parted like the sea as I guided the knife through it. It was almost effortless.What I also appreciated was the length. Shorter wouldn’t have been enough to handle a solid block of meat cleanly, and anything longer would have been a bit much for a rookie meat cutter like me. This felt like the right balance between power and control.The entire time, the only thought running through my head was: “You’d better be careful and triple-check that this knife never hits you.” If it glides through meat this easily -- and I’m basically a very large piece of meat myself -- it would have absolutely no problem slicing me too.So here’s the warning: if you’re not a chef or a butcher, this knife will absolutely handle the meat with little effort... but you’ve got to handle yourself.Excellent performance, very sharp, and great value — just don’t underestimate it.

Ribeye Steaks from Bone in Roast

This last Thanksgiving we sidestepped the turkey dinner and went with a bone-in rib eye roast. The Boneless ribeye steaks which we wanted, were three times as expensive as the bone in roast therefore, I decided to be my own butcher and cut out the bone and cut my own steaks.After a couple YouTube videos, I had the technique but found out I didn't have the knife. Even though I made a mess of cutting the steaks, my reverse searing method made up for it. They were so good in fact, that I went back to the store to get another bone-in ribeye roast as they were still on sale.Enter the Brodark 7" boning knife. It made short work of cutting 1 1/4" steaks from the roast after removing the ribs with ease. They looked just like the boneless ones that were triple the cost.The box of the Brodark says 6" but it actually is a 7" blade and 12" total including the handle. The handle feels really good gripping and the blade was really sharp. As another reviewer stated, the blade on this knife is not flexible. It probably would not be appropriate for filleting fish. It works great with beef and chicken though.Happy with the purchase and would recommend.

Sharp! 5 Stars for Sharpness - 4 Stars As It Cut My Wife's Finger and Mine Too!

This is a sharp knife!Pro's:1) Sliced Chicken Breast through the middle to butterfly it to make chicken cordon bleu.2) Sliced St. Louis smoked ribs perfectly.3) Sliced baked rosemary/garlic bread easily4) Sliced Thanksgiving turkey easily.Con's:1) Cut my wife's finger where the blade meets the handle while she was cutting bread.2) Cut my finger as I was gently washing it where the blade meets the handle.Note:It deserves 5 stars for sharpness but I only gave it 4 stars because the 1/2 inch area where the blade meets the handle should be as thick as the top of the blade and it should be DULL! All of my other professional knives are made like this. Both of the cuts my wife and I sustained were deep small, but deep enough that took a week to heal. If you buy this knife it WILL cut what you want.. but you should be very careful as the handle gets slippery when cutting meats and when washing/drying it. Many nice professional knives today have a silicone wrapped handle for NON SLIP purpose. I recommend the manufacturer DULL the 1/2" area just before the blade enters the handle and cover the handle with silicone.

A really good knife!

It's a big knife i got the 12", I probably could have worked with a 10". That aside, the knife is really good! It's built beautiful, and the balance feels great. I carved out some really thin pieces of bottom round pot roast with it. Oh before I forget, the presentation was amazing, beautiful packaging! If you're looking for a carving knife, give it a try. I think you'll like it.
