I should have bought stainless steel.

I have never had cast iron. Read up on using it and the care involved. Watched a few videos on seasoning and cleaning. Thought I was ready for this and excited to save the money over buying the great looking stainless griddle. After seasoning with Crisco, the thing is super sticky. Yeah, I did the 350 degree thing, heating it first, light coat, all that. Bottom line is, my time is worth more than the care this thing is going to take. It's very heavy to handle (I'm 6'5", a big guy) and it's just a pain. I will update this when I actually try to cook on it. Figure I'll burn off all the Crisco on the barbeque, wash it good (again) then season with Canola oil this time. I know you cast iron people are probably saying about now, "well he just doesn't know how to use it right". You're right, but the point is I don't like the time it's taking just to get ready to finally cook something. Very disappointed in my purchase, and you will be too unless you already like cooking with cast iron. The product is great, high quality, looks super, has a great full width grease tray on the smooth side, good grill ridges on the steak side, everything about it is super......but what a pain! Just too much effort for the reward.....and now I'm back after awhile. Burnt off the remaining Crisco on the barbeque at 400 deg for about an hour. It's really nice now, not sticky. Used spray Canola oil and grilled up some bacon, did perfect. SO... I'm getting used to it, starting to like it, just took awhile I guess. I think it's going to be worth the learning curve and those who swear by cast iron cookwear have probably gone thru this same process? I doubt if the stainless steel griddle would have cooked as good. This is so even, just take your time to heat it up first. All in all, I'm happy with my purchase now. The price was great and I've found a perfect place to store it when not on the grill. BTW, I am using this over a 5 burner stainless steel gas barbeque. This makes it so versatile so I can do all the breakfast grilling outdoors now. Pancakes, eggs, bacon, hashbrowns and sausage. We have a popular campsite now! I am glad I purchased this now.

Rock Solid - Must buy

I have been looking for a large cast iron griddle for a couple of years. Searched ebay for Griswold #9 and #10 griddles, but couldn't find one for the right price/condition. I have looked at every piece of cast iron and steel I could find and decided to take a chance on this one. Background: I have a professional 6 burner gas Capital stove to use this on and would think it would work on any stove, but it will overhang most grates. I don't see this being a problem if you want a large surface. The grate came seasoned but I seasoned it some more to ensure its non-stick features. Rub bacon grease on it a couple of times with a paper towel and put it in an oven at 450 degrees to season it for 20 minutes or so. You will probably need a 36"/6 burner stove with an oven to accept its width. I recommend measuring before you buy for fit in oven, grill, and storage and remember this is heavy. To clean, just wipe while its still hot with paper towels. If you must scrub just run it under hot water with a brush with no soap while it is hot and it good as new. However, it is just as easy to clean on a hot stove top right after cooking. It cooks just about anything just like a professional griddle in a restaurant. Pancakes and grilled cheese sandwiches are outstanding. It is a huge surface for bacon or cooking in zones at different temperatures. I plan to buy another one for my outdoor grill for steaks as I don't want to mess up the cooking surfaces of either side. This is a must buy for an outdoor grill or a 6 burner cast iron grate gas stove top. Buy it, you will be happy.

Solid Product, When It Finally Arrived

I bought this griddle for pancakes, grilled cheese, and the occasional hibachi-style Asian meal for my growing family. Overall, I think it's a solid choice for such tasks. It transfers and holds heat well, as cast iron typically will. The manufacturer's shipping department, however, proved unreliable to say the least. The first one we received was cracked due to insufficient packaging, and then they replaced it with the wrong product, and finally, almost a month after ordering it, a new one was delivered intact. I hope this experience is not typical, and the customer service rep was personally helpful. The griddle is pretty well constructed, though I noticed that the flat side was not as flat as it should have been. It looked as if the ridges on the other side had caused a few undulations in the surface. It's not severe enough to really affect day-to-day use so far, but don't expect a plate-glass-flat surface.I use this griddle on top of my 5-burner gas stove, and I can run all five burners under it for a full cooking surface. Or I can turn on two or three burners and reserve a space for keeping food warm. Be advised that there will still be some cooler spots between the burners, even with all of them going. If you insist on very even heat across the whole surface, you might be happier with a high-end electric griddle. That said, cast iron heats more evenly over a burner than most other cookware made of other materials, and you can learn to utilize the cooler spaces for slower cooking.Anyone considering buying this product should think carefully about the product specs. The usable cooking surface is 23"X13", which is big. But be sure it will fit on your intended heat source. It may not sit securely on some stovetops. And yes, it really does weigh 25 lbs. Suffice to say, cleaning it can be a challenge. I usually scrape it thoroughly with a nylon scraper or spatula while it's still warm, and wash it down with hot, soapy water while it's still on the stovetop but has cooled somewhat. Then I heave it over to the sink to rinse it off with the sprayer. I return it to the stovetop to dry it over low heat. Or you can use a paper towel to dry it. I really like cooking on cast iron, so I think this extra trouble is worth it.The griddle comes with a handy bag for storage, though the zipper broke almost immediately. And finding storage space for something this size can be interesting. It fits in one of our cabinets, but barely. The included instructions suggest seasoning the griddle before using. That's a nice idea, but it doesn't fit in my oven, and because seasoning produces a lot of smoke, I'm not about to do this on the stovetop. Fortunately, a well-cared-for cast iron surface will eventually build up a very nicely seasoned surface. Finally, although this feels very durable, be aware that any cast iron can crack or shatter if dropped on a hard surface, so handle it carefully when moving it.
