I love the feel of this knife. It is light and easy to hold. It appears to be the appropriate length and size for carving and that is the only thing I would use it for. The most expensive knife that I own. I will use this for special occasions. I love the box that is provided, it is wood with magnets to hold it together. The one thing I wish it was a knife for chopping and not just carving.

Excellent Knife-Well Made-REAL DEAL

First and foremost I think it's important to note this is NOT A KNOCKOFF BRAND! Cangshan is a legitimate company. They are actually one of the top companies in the high end kitchen knife market. A quick bit of research will confirm this to anyone who is not familiar with them. They compete head to head with Wusthof most often as they are similar in design, performance, and long lasting quality. I am fortunate enough to own an entire set of Wusthof and have been lusting after a Cangshan knife to compare them in my own kitchen. I can say without hesitation this knife is gorgeous quality and I have no doubts it will still be carving long after I am gone. It cuts everything with such ease it's incredible. Cannot wait to use it this Thanksgiving even if it's only my household who will get it see the paper thin slices of meat this year.As for it's comparison to Wusthof- I say it's a fair comparison. They feel very similar, look similar, and both are made exceptionally well. However if I am being honest I felt this knife outperformed my Wusthof carving knife by a mile.However, my old knife has seen quite a bit of action and has been the tool with which I learned so take that into account. It also came with a set whereas knives like this one are forged for a single job which can impact performance too.Personally I would not hesitate to recommend this to anyone in need of a carving knife that will never fail. I am going to cherish this gem in my kitchen.

Well balanced carving knife for "prestige" occasions

Firstly, this is easily the most expensive knife I have and I find myself holding back from using it on that account. But having used it to prep meats and vegetables and carving (its intended use) I have to say it has great feel in the hand, is balanced wonderfully despite its length, and is just fantastic. The length makes it ideal for carving roasts and other bone-out parts of the meal since it allows you to make use of the full length of the blade when drawing it, possibly getting the whole slice in out pull. It works fine for other jobs as well but the length makes it ideal for cutting and fine chopping. The width is just right for carving and doesn't deflect when pulled. Honestly, I plan to keep this knife in its fancy box (the magnets in the lid were an especially nice touch) and bring it out for big meals and occasions.

Beautiful knife.

I've never had (or even used) a knife as expensive as this one. The craftsmanship and quality of this knife is unlike any other knife in my collection. I have some very nice knives, but this is the ultimate quality knife that I'll probably ever own.I haven't had the opportunity to carve anything with it yet, but Thanksgiving is only 2 weeks away and I have 2 large turkeys in the freezer just waiting to be cooked and sliced.It will be a pleasure bringing this out and using it.

Impressive knife

I love collecting kitchen knives. I didn't have one like this though. it comes in a very nice box to keep it stored, and the knife itself is wonderful. I used it to carve the thanksgiving turkey this year and it was very sharp, held the blade, and fit my hand well. This is a welcome addition to my collection.
