The Cangshan ELBERT Series German Steel Forged 3.5" Paring Knife (Black) is a good quality, full tang forged knife. I’ve been using it almost daily for a month or so. I use a paring knife more than any other knife and consider it one of three essentials, along with an 8” serrated bread knife and a chef’s knife. I usually have a few good paring knives on hand given how much I use them for prep.The ELBERT is sharp out of the box and handles a variety of tasks well. I use it to trim fruit and veggies, mince garlic, devein shrimp, slice and dice avocados, slice and cube chicken breast and more. It feels balanced and comfortable and provides a good grip. The handle feels a bit chunky and I prefer the more nimble feel of my Cangshan Keller paring knife, but ELBERT is more affordable and still enjoyable to use.The ELBERT has no sign of rust so far and should hold up well if hand washed and dried promptly. It’s comparable in price and quality to my Cangshan L1 Series German Steel Forged 3.5-inch Paring Knife that hasn’t rusted after months if use. I slightly prefer L1’s full bolster to ELBERT’s modified bolster, but that’s just preference. ELBERT’s pommel is longer at top while L1’s is longer at the bottom, but I get a good grip either way. Either one would be a good choice at the $25 price point. 5 stars. Made in China.

I'm a bit of a knife collector, have knives everywhere, kitchen, garage, shop, pocket, etc. and I'm picky about my knives. This one has become my go-to knife for much kitchen work! I could tell it was pretty high quality initially by the packaging, it's sleek appearance, and its feel in the hand. It is well-made, hardened steel with chromium content (so it is more corrosion resistant than most), very well balanced and just feels good in my hand. I keep sharpeners everywhere, but so far this one, which arrived extremely sharp, has held its edge with no sharpening yet needed. I'm aware some complained about the $26 price tag, but from my experience, a good, well made knife can be pricey, so I consider this one a bargain. I highly recommend this knife! This thing is nice and sharp. I mostly like the design. The smoothness of the handle has a great feel. Balance is good as well. Overall look is sleek. After a while of light usage the blade is still as sharp as when it arrived. The packaging iself is cool and I keep it in there when not in use. Knife pricing has quite a wide range, depending on what you are looking for. This one seems o be fairly priced in comparison to others that appear to be of the same quality. One aspect I do not care for is that the handle ends with a hard angle that presses into my palm when I use the knife. Not a deal breaker, the unit is still a fine knife. Personally I prefer a rounded handle. I still recommend this piece.

Good quality and sharp
This arrived in a nice retail box. The knife was packaged well and came extremely sharp. The knife does appear to be a full tang design. The handle is well done and is a smooth hold all the way around...none of those annoying edges that you'll find on some knives. The knife is well balanced in the hand and a very comfortable grip.I started using this knife as my regularly used paring knife for normal small slicing items. It holds well and it slices through everything I used it on.Overall - Really nice knife design, feel, balance, and sharpness. This will be my go to paring knife going forward. It's a little on the high side for price at $26 compared to other paring knives, but the quality makes it worth it to me

Feels like an extension of my hand
Very nice looking, well balanced paring knife. The white handle makes it especially eye catching.Blade steel is on the good end of quality but is by no means up near that of knives like Global. Then again it's not $55.It weighs 3.67oz so it's got some heft to it. (for a paring knife) The blade is right around 4" long, overall it's just over 8" long, the handle measures about 3/4" tall x 3/4" thick getting taller as it reaches the butt.The knife feels very well balanced, almost like it's an extension of my hand. The thicker handle makes it easier for me to grip/hold.It came sharp and after about a week of fairly heavy use it's keeping it's edge. As I get older my poor hands get even more arthritic, so the smaller handles on my Global knives are tougher to hold. This knive's more substantial handle makes it easier to use while sacrificing just a little on the quality.At $26 I'd hardly considered it cheap , but IMO for an everyday utility knife, it's a good value for the money. It also comes in very nice packaging which makes it great to give as a gift.

Sharp little knife...
This is becoming one of my favorite kitchen knives! I eat a fair amount of vegetables and I do a lot of cutting, such as tomatoes, avocadoes, onions, carrots, etc. This knife has a nice feel to the hand, with a little bit of heft. It is sleek and smooth, and yes, it is beautiful which, while not necessary, is a nice bonus. I have used this on baby tomatoes and there is a slight hesitation before the knife breaks the tomato skin, but I still feel it does a great job. Very happy with it!

This paring knife is really nice to look at. The metal is smooth with almost no imperfections. The handle has a nice feel to it and doesn't want to twist or torque in your hand while using. It is easy to clean and very, very sharp! I have not noticed any staining or discoloration of the handle. I am not sure what the handle material is made of but it has a good grip. Not slippery soft but a grainy feel to it. Definitely a great buy for someone who spends even a tiny bit of time in the kitchen.
