Seems like a good knife so far, but you know how it is, brand new knives, always seem like good knives… Until they don't.I'll put this to some more use and see how it does as far as edge retention and ability to take a sharpenomg go.If it goes poorly, I'll be back to add to this review.But in general, so far, this does seem like a nice knife, and I've had no issues with it as of this point.
Great knife, especially for the $40 price. I just used it to trim fat from 3 pork butts, it was like using a fresh razor blade. Sharp all the way to the tip. Comfortable to use. My new favorite in the kitchen!"X50CrMoV15" seems like randomly generated nonsense, but it's actually the makeup of the blade material, containing chromium, molybdenum, and vanadium. Knife blades always involve a trade-off when it comes to hardness - the better a blade holds its edge, the harder it will be to sharpen. X50CrMoV15 stainless steel, from what I've read, is kind of on middle ground compared to other common blade materials that you may see. It holds its edge better than some, but is easier to sharpen than others. This knife comes with a very sharp edge and it should hold it for a while if properly cared for, but will eventually need sharpening. If you never sharpen your knives and really want the edge to last, you might look for something in VG10, AUS-10, or 440C stainless, all of which are harder than X50CrMoV15, but I've had some stainless knives (not sure what kind of blade) that I could NEVER get a good edge on after they got dull. I like something that can be worked more easily when the time comes for sharpening, and this knife should deliver in that respect.
Fine Craftsmanship by Metal Artists who can be rightfully proud of their work!The certification words NSF say it all. NSF stands for National Sanitation Foundation which is an international independent laboratory that tests food use products for food handling safety requirements.The whole very complicated assembly knife was flawless so the manufacturer must have high Quality Control inspection standards along the assembly line and before leaving the factory. The excellent functional design and high quality manufacturing make this a superlative knife. Quoting verbatim from the website, this statement is accurate: “Handcrafted full-tang knives forged from tight-grained X50CrMoV15 German Steel for incredible durability, stain resistance, and exceptional edge retention”. Simple Food Grade Mineral Oil is my preferred long term knife steel preservative.
REVIEW UPDATE: Have been using this knife nearly every day for about four months. It continues to stay sharp. Easy to clean (I hand wash) and is becoming my favorite all-purpose kitchen knife.ORIGINAL REVIEW: Very happy with this six-inch boning knife. The handle is nicely weighted and balanced with the blade. It feels secure and comfortable in hand. The section where the blade attaches to the handle is smoothly finished, as is the handle. The knife flexes, as expected of a boning blade. Out of the box this knife cuts with precision, sharp and smooth. I haven't had it long enough to comment on durability, including how long the blade maintains its edge. Initial impression is that this is a very nice knife and I've enjoyed using it.
This is a really impressive boning knife. The handle is sleek and nice looking. The knife has a nice, weighted, balanced feel in the hand. It is exquisitely sharp, so be careful. It comes in a nice box, if you're considering gifting. I used this on chicken butchering day here on our farm and it processed 50 broilers without any issue and without dulling. I am very impressed with this knife and would buy again.
I like this knife from cangshan. I don't like how slick the handle is, but otherwise it is sharp and balanced. It passed the paper test out of the box, and helped cut up a chicken quickly. It is also beautiful, with nice attention to detail.
This a great knife for the kitchen. Very sharp and makes it easy to cut any type of meat. Great handling and comfortable knife . Would make a great gift for the cook in your life.
