Great knife!

This knife is a little pricey but the quality is nice and it has cut through pretty much anything for me with ease. The handle has a comfortable feel to it that allows a nice grip. The blade comes comes very sharp and cuts through meat like butter. The design and aesthetic of the knife is also very nice. Cleans up easy and haven't noticed any blemishes due to use or cleaning. The only thing I would've liked is a cover because it's so sharp so you need safe storage for it if you don't already have a block or holder.

One of my favorite knives

i have been testing out several knives over the last year in the Vine program. I am the primary cook and always cook from scratch. I am also a major carnivore, including roasting my own roast beef. This quickly became my favorite knife for slicing and carving. It came in a nice package and was sharp out of the box. I am able to cut very thin slices, even from a fresh, medium rare roast right out of the oven. It's got good balance and a comfortable handle. My partner uses it constantly too and she doesn't always like the feel of a knife. She likes it so much I have to beg her not to use it for chopping, since that's not its design. The blade has maintained its edge with 3 months of everyday use. My only wish - and this goes for a lot of knives - is that manufacturers would include a sheath with their knives. My partner is a little leery of magnetic knife strips and knife blocks take up too much valuable counter space, so I have a knife drawer. It's hard to find good fitting sheaths for a lot of my knives

I should have paid more attention to the description.

I just saw carving knife and thought to myself, oh I can use one of those. I purchased it to find it came in a shipping box that looked big enough to fit a machete. Oh oh! I messed up! I opened the box to find this product in a plastic container that filled half the space in the box. Yes, it surely is a 9-inch blade. It is pointed and extremely sharp. I lightly ran my thumb across the blade and was glad I didn't apply any kind of pressure, or I would probably draw blood from my thumb.I was hoping for a smaller multipurpose blade I can used to curt or peal fruits. I can't imagine whipping this blade out to cut an orange. This blade seems more specialized. If you want to quickly cut steaks or any fleshy meats into strips or finer cuts, this is the tool for that. The blade feels a bit thin, so I don't think it can be used for chopping without damaging the blade; you will need a denser blade for cutting through bone. If you just have slabs of meat, this blade can make short work of that.

Super sharp, good quality!

Fantastic knife and it is ultra sharp.I first used it to carve our Thanksgiving Turkey. The knife has just the right amount of flex to it and holds an edge very well.The only downside that I discovered was that the handle is very smooth and has no stop between the handle and the blade. While carving our Thanksgiving Turkey, my hand did slip forward and with the handle and my hand oily from carving the bird, I slightly caught my finger on the blade but was fortunate to have only received the equivalent of a paper cut on my index finger.Over all, I am super impressed with the knife, the price point and the performance. The only reason I did not rate the knife at 5 stars is because the handle is a little to smooth for safe use of an unskilled user. I will definitely be more careful the next time I use it.I definitely recommend the knife but use with caution.

Sharp!

I was quite surprised by the quality of this knife compared to the price. Similar knives of the same quality would set you back almost twice as much. The knife is very sharp right out of the box. One pull through a whole package of bacon sliced right through with no tearing or ripping. Very smooth. The weight is very well balanced. You can tell as soon as you pick it up that it's not a cheap blade. Out of the box, wash the blade and use. Nothing else needed. The only thing I might change is to add some textured surface to the handle. It is very smooth so if you have anything on your hands that would cause your hands to slip off the handle, it could be bad. Responsible use of this knife, like washing your hands before use, would be highly suggested. The blade is VERY sharp. I'm anxious to see how well it holds an edge and if a simple stropping help it maintain a solid edge. I feel like it will do well but only time will tell.

Sharp and sturdy carving knife

I got the Cangshan carving knife recently in preparation for Thanksgiving dinner. I have had larger multipurpose knives in the past that did fairly well for carving a turkey but wanted something more specialized. The knife comes well packaged and you can immediately tell the quality. The handle feels incredibly solid and the knife was very sharp out of the box. It did great carving up our 19lb bird and was very easy to wash. The only possible downside is that the handle is quite smooth with a glossy finish that could make handling slightly more difficult if it gets oily or wet. I didn't have this particular issue but could see the potential there. Overall, a very sturdy knife that seems like it should hold up well over time.

Great Quality

Any good chef will tell you, you are only as good as the knives you use. This one is no exception. I used this knife for the first time in carving our Thanksgiving turkey. Out of the box I was impressed by the balance and weight of the handle. I like a heavier knife and this one was good for me.As far as carving, the turkey didn't stand a chance. Sad to say, but my turkey was a little on the dry side, but this carving knife had no problem cutting nice, thin slices. I found the blade to be sharp and the quality of the steel should ensure that this blade is still around long after I'm gone.
