Beautifully made knives that do not rust.

I bought the Cangshan Helena paring knife about six months ago at Pottery Barn, and I liked it so much that I bought the 8" inch carving knife last week, which just arrived, and seeing the quality of this one I just purchased the 5.5" as well for a matching set. Other complaints about these knives rusting must be with a lower quality version of the Cangshan knives. The Helena series does not rust, it's made from German steel, and they are gorgeous knives. The finish is superb. The 8" that I just got today is incredibly well balanced and well made. Very happy. It probably would have been cheaper to buy an entire set, but they didn't have the set I needed, so I had to buy them individually.

Great value for your money

Cons: not a very good quality handle, already cracked and will need to be replaced at some point with something more reliable like wood. The sharpening was done not very preside but if you don't look too close you wouldn't notice.Pros: Although it is not a good idea to buy knives without actually holding them first, this is one of favorite knives. Very convenient (for my hand!) to hold in pinch grip; the knife does the job for you.The steel quality is outstanding. Bought a year and half ago, I haven't sharpen it even once yet, although, it is probably time to sharpen a little. Obviously, I was honing with a steel it before each use, but still... very impressive for a knife used at least once almost every day.Considering what you get for your money, I highly recommend it. Take good care of it and it will take good care of you.

Good Knife - Some Considerations Below

Good knife. The feel is good in hand, though the handle could stand to be a bit thicker, even in pinch grip. For a rocking cut, the pivot point could be a hair farther back. The knife came sharp but the factory grind is bad. It's uneven and one side of the tip is overground. This was clearly a rush job and either there was no final QC or they were rushed too. The white handle material looked a little cheap to me. I'm not sure, but it's probably not G10. In the end, most of these critiques are subjective and most people probably won't even notice the grind issues, so only one star off. Overall, it seems good. Will update review if anything changes.
