Same Wusthof steel for fraction of the price!

I have a collection of Wusthof kitchen knives but needed steak knives. Wasn't going to pay almost $500 for a 4-set... So my knife shop introduced me to Cangshan and I'm EXTREMELY impressed! Same German steel (X50CrMoV15) and I can verify it feels and sharpens the same. Not like 440 stainless. Except a set of 4 was less than $100.

Whether German, American, Japanese, Chinese, Brazilian... X50CrMoV15, is X50CrMoV15 steel, per spec. Interesting, a Chinese company touting "German" steel. Sharp, durable. Beautiful knives. Nice handles. Very comfortable. Quality finish, did not really feel any seams on the handle. Ultimately, sharp and durable and stainless. It is that. Fits and feels good in your hand, balanced, ergonomic handle,... It is that. A bit pricey (-1) for normal, typical, knives of this quality, but if you take care of your knives, they will last you a lifetime and some. I like to cook. A good sharp knife make it easy and a joy to use. Chef's is just right. Pairing, excellent for delicate and detailed work. Serration is sharp and durable. Very Good Knives.

Comfortable, sharp knives!

This set arrived safely and was packaged well, although it did take over a week to arrive. All three knives in this set felt very comfortable to hold. I thought the balance was nice. These are german steel, however note the knives are made in China...a bit of a bummer. The blades arrived nice and sharp. The blades are also easy to sharpen (we use a sharpener with diamond rods). Using the paring knife I sliced a small roma tomato, I was easily able to shave off very thin slices. Good starter set!

The blades are sharp but there are issues with the pairing knife

I love my other Cangshan knives but these have some issues I have never experienced with Cangshan before. First, the knives were tossed around in their packaging at some point in their delivery and definitely knocked into each other. Second, the pairing knife feels horrible in my hands. The handle pieces that encloses the tang of the knife does not perfectly fit and creates hotspots in my hands where they do not line up. Overall, I am somewhat disappointed with this set compared to what I have received in the past.
