I own a lot of kitchen knives and most of them are from well known brands in the US market including Cangshan. Almost all of them are higher end in terms of finishes and features as well.Cangshan entered the US market as a total unknown around a decade ago bringing well made Chinese knives to compete against Japanese and German offerings. The value proposition was very high using specific steel sourced globally and employing skilled artisans to manufacture the product. The result was a shift in expected value in the marketplace. Now with this latest series, they continue to push the value envelope. I had no idea if I'd even like the 12" blade length and overall form factor of this knife as it's very different than any other style I have. Turns out, it's fantastic and very easy to maneuver.Pros- Excellent sharpness right out of the box- Very nice balance- Finish on the blade is OUTSTANDING with wonderful attention to detail- Finish on the handle is also great and feels very nice in the hand- The magnetic sheath is a must and works wellCons- Blade profile isn't for everyone. It won't be a workhorse for me... More of a specialty blade for slicing that requires a lot of control- Packaging was a bit flimsy for the price point. It arrived fine but the inner molded plastic didn't keep everything in place correctly. This wasn't due to rough handling in shipping. There were too many weak tolerances in the package itself... Makes gifting a bit dodgy.- Not as great a value as others in their line. You pay more for the premium aesthetic... Con to some.Recommended!
This is a serious knife for serious home chefs. I ordered this knife to use when we smoke larger pieces of meet as well as skin larger pieces of salmon, etc. The knife came in super sharp!! no touch up required. It is fairly balanced in the hand for something so long. The handle is full tang and is small enough to grip well. It isn’t curved for an ergonomic grip, but it is easy to use and you feel in control of it while slicing. The blade is beautiful with good workmanship and quality. The blue and black color scheme is also gorgeous and it stands out against all the boring black handled knives in my kitchen.So why not 5 stars? For $149.95 at the time of this review, the packaging is awful. During shipping the knife slipped out of its holder since it was only secured with the tiny dot for the point and a small recess in the box. It damaged the sheath pretty bad. I don’t see any damage to the knife (which I wouldn’t expect to begin with) but the box was harmed too. See the photos above. For this price, I would expect this knife to be packaged much more securely. Also, I’m a little concerned about the painted wood that the sheath is made from. It splinters easily and over time I feel that this is going to wear and make wood splinters in my knife drawer if I’m not careful.I don’t feel that this knife is the best value. With better packaging and a lower price point, this would be a great knife.
Why did you pick this product vs others?:This knife is beautiful. It's sharp, well-made, strong, durable and has a gorgeous textured blade that's perfect for making sushi and sashimi.
For quality, balance, sharpness and overall construction, this is the best knife I’ve ever used. I’ll qualify that by saying that I’m certainly no knife expert, much less a chef, but this thing to me is flawless.The weight of it helps with guiding it through what I’ll call ‘long cuts’. Specifically, tonight I cut raw salmon from the skin in order to use the skin to make hot salmon skin hand roll. I wanted to leave about 1/8th of an inch of the salmon meat on the skin, and this knife performed well, cutting horizontally through a 10” salmon filet, giving me the salmon skin I needed. For me, this was the big test of this knife. It also easily cut shrimp for the ebi nigiri and cucumber and avocado for the hand roll, but that was generally expected. If this knife holds its edge over time, it will be an important knife to have in your collection.It’s a little long for my needs, a few inches shorter would have been just fine, but no matter; this will allow me to use it for other cuts of meat, although it is designed as a sashimi knife, and that is primarily what I’ll use it for.It was packaged in a lessor manner than something of this caliber deserved, but that’s only a superficial issue. The sheath however is excellent although I’m unsure of what the magnets are for.
First and foremost, I must say that this knife is absolutely stunning! It has a 12-inch Damascus steel straight edge blade attached to a comfortable blue faux wood handle. The knife also comes with a protective wood sheath that features magnets for secure and sturdy blade protection when not in use.It’s important to note that this series of knives from Cangshan is not your entry-level set, which means it also comes with a relatively high price tag. At the time of writing this review, the knife is priced at $150, which is comparable to other knives of similar quality.This knife is built to last a lifetime if properly cared for. Hand washing is the only recommended cleaning method, and it should never be subjected to dishwashing.Over the years, I’ve had the opportunity to use several different brand knives, and I can confidently say that this sashimi knife surpasses them all in this category. Whether it’s slicing through a raw meat or a fully cooked roast, it cuts through effortlessly.I absolutely love cutting with this knife so much that I wish I could use it more frequently. It’s a perfect addition to Cangshan’s other KITA series knife sets. If you’re willing to invest in a high-quality set of knives, this sashimi knife is an absolute must-have.
