Cuts unevenly

We got this knife to augment a Henckels serrated knife we have had forever and love. We cut fruits and vegetables with this Cangshan knife and were very disappointed. It cuts unevenly and moves side to side in the item you are cutting. We cut a few apples and it cut in a wavy pattern even if you tried holding it as straight as possible. Maybe the knife I received has some imperceptible wobble, but it looks to be flat and true. I can't see or sense a bevel, but this does not cut cleanly. The Henckels cut perfectly straight through the same items, so it's this knife. It feels great in my hand, it looks amazing, it's well-balanced...it simply doesn't cut properly for some reason.

Super sharp utility knife-Update

This is the most expensive kitchen knife I’ve ever owned so I had high hopes and it hasn’t disappointed me yet. The 5” utility knife is made from high carbon Damascus steel, suggesting the knife will perform well and retain its sharpness. It is super sharp.Handle - The handle is fiberglass, bright blue and has a faux wood design. It’s attractive but more importantly it is comfortable and provides a secure grip.Balance - The knife is the perfect weight and balance for me. It fits and feels fantastic in my hand making it easy to control.Blade Edge - This serrated edge utility knife is versatile. The 5-inch length strikes a balance between precision and utility. It is razor sharp and cuts through everything like it’s butter making slicing or chopping a breeze.Damascus Pattern - The knife is really attractive. It has a very unique pattern on the blade.Sheath Inclusion: The fact that the knife comes with a bright blue sheath to match the handle is a practical addition. It provides protection for the blade especially during storage. It also helps maintain the sharpness of the blade by preventing it from coming into contact with other objects.It is recommended to hand wash this knife so watch your fingers! After reading about Damascus steel I'm finding that special care may be required to prevent corrosion and maintain its appearance. Some sites recommend waxing but I think the price point for this knife, although I thought was expensive, doesn’t fall into that kind of category. I’ll add/change the review if anything changes. Additionally, the serrated edge may be more challenging to sharpen than a straight edge.All in all it’s a very nice knife that could be gifted as it arrived in a nice presentation box.Having used this knife some more I’m not as enamored as I first was. my new favorite knife for peppers and tomatoes

It's great having my kids help make meals... until they beat up my knives. So, I wanted to get a nice serrated blade knife and I got a chance to try this one from Cangshan.I will admit I'm not a schooled chef or knife expert, but for me, this is a really nice knife. I'm not sure if it's worth its price tag, but I am completely pleased with everything about it--from look to function. It's definitely the nicest knife I have now.This is a full-tang blade made with their "proprietary" Damascus steel blend. It's definitely heavier than I was expecting. It's got a great feel in my hand, even with me having much smaller than average hands. It's nicely serrated and cuts cleanly.I was surprised it has a wooden sheath that also has a magnet inside. It's nicely finished to match the style of the knife handle. Unfortunately the top edge of mine was damaged and cracked. Since it's just the sheath I'm not concerned.This is going to be my go-to knife for cutting peppers and tomatoes. Each summer I grow over 2 dozen of each of those plants so I have plenty of produce to cut and core each year. This knife will definitely get its heavy use then.This comes elegantly packaged and is suitable for gifting. They include a sheet of instructions for how to clean and store the knife. There's also suggestions how to maintain the copper rivets if they become too tarnished for your style.I really like this knife. I haven't used it for very long, but I appreciate everything about it.

Blade Needs Sharpening: Cangshan KITA Series 5-Inch Utility Knife

Review:I was eager to put the Cangshan KITA Series 5-Inch Utility Knife to the test, but unfortunately, it fell short of expectations. Straight out of the box, I noticed the blade was disappointingly dull. It struggled to make clean cuts through onions, leaving me frustrated and reaching for another knife. Despite the promising high carbon X-7 Damascus steel, the lack of sharpness was a letdown. While the knife comes with a sheath for protection, the immediate need for sharpening was unexpected and disappointing especially considering how much it cost.I am upset because it is a beautiful looking knife and the magnetic wooden sheath is truly an innovation!I gave it an extra star just for those two points, It's THAT Good LOOKING!
