This is a great knife

This is the first time I tried a boning knife above the low end of the price spectrum. I wasn't disappointed. I tried this boning knife alongside a chef's knife and some steak knives from the same brand. All of them performed really well. This knife was my favorite of the set.The knife is Damascus steel, and indicates the X-7 rating on the blade. The handle is an interesting shade of blue, and comes with a form-fitting magnetic sheath. It fits really well in my hand. The squared off edges make it easier to grip, even if it gets wet. I'm not particularly fond of the brass circle in the handle, but that is something the manufacturer seems to be pretty proud of.I initially tested this knife on some slightly overcooked chicken. It sliced through each of these with minimal effort. Of the three types of knives I used in this test, this boning knife performed the best. After getting through the test with such ease, I thought I maybe used too tender a piece of chicken. I went back with a table knife and it took significantly more effort to cut. These knives indeed work as well as I thought.It is recommended to hand wash this knife, and not use a dishwasher or leave in standing water in a sink to keep the blade nice and sharp, and reduce unnecessary wear on the blade. I washed the knife promptly and dried it well. The knife is so sharp, it sheared some of the sponge off as I was washing it. It is definitely necessary to be cautious when cleaning the knife.The boning knife is part of a larger set of knives. I have the three types I mentioned, and would like to get the complete set. I'm pretty happy with the knives. As I mentioned above, this one was my favorite. At this price point, I'll have to collect the rest over time, but it will be worth the wait.

A serious knife for serious kitchens

Of course, we all know that really sharp knives are easier and safer to use than dull knifes. And of course, we also know a lot of people who are scared of sharp knifes. Wee the second group should be afraid of this very serious knife for serious cooks. (I can't say chefs, bc I never attended culinary school). This is full tang metal which has been whittled down to a delightfully thin end at the end of the blade. I can balance this knife on one finger, slightly behind the bolster, which indicated how well balanced it is. For the first cuts, I chose something a bit problematic, thawed chicken breast. I cut scalloped pieces which were really thin, although not transparent. The knife is extremely sharp, and the blade is solid with really no flex. The blade has a decent thickness at the bolster which becomes razor thin by the tip. The knife blade is attractive with Damascus styling similar to the famous "S" brand. Barrel shaped octagon handle with a slight texture on either side for a firm grip, even when wet. Blue black pattern, which is more prominent on the sides of the handle. Very nice blue dyed wooden sheath which maintains a firm grip on the knife through the use of magnets. This is a deboning knife so there is a sharp arc to the blade at the tip, which really makes you appreciate what a large metal blank must have been used to create this style of knife. Looking forward to other knifes from this maker.

It's a nice sharp knife

I honestly don't know enough about damascus. I know it's layers of steel folded over multiple times but I don't have any damascus to determine if this is an actual one or not. I tried looking underneath a microscope and it looked smooth but that doesn't really say anything.In terms of usage, it's sharp but that's expected of any new blade really. The sheathe is made of wood and has a magnet which attracts the top of the blade. You get a really nice smooth feeling as you're putting the knife back in.X-7 seems to be their proprietary alloy. There's not a lot of independent information about the alloy beyond what Cangshan says about it.

Beautiful, sharp knife. Great for gifting.

I'm no expert in knives, but i do recognize nice knives when I see one. This is definitely a nice boning knife, but it's hard to say if its worth the high price tag.First, it's nicely packaged. It doesn't come with a case, but you don't need a case of you're planning to actually use your knife. It does come with a wooden sheath that magnetically holds the knife in place.Second, its sharp. It easily passes the paper test. This is likely due to the 16 degree angle that Cangshan uses for their blades. I haven't had it long enough to see how long the blade with hold the edge, but i haven't chipped it yet.Third, its beautiful. The blade has a damascus pattern that does not look etched. I have another damascus type kitchen knife with similar pattering that holds up under scrutiny under a magnifying glass. I've had others thst were clearly laser etched. The blue handle is synthetic, but is well polished and flows with the rest of the blade.Fourth, I don't know what its made of. They claim proprietary X-7 steel, but that doesn't say what its mixed with. Chromium, molybdenum, vanadium? The say X-7 has about 61 on the Rockwell Hardness Scale, which is in line with Japanese type steel. I have no way of testing this of course.So, overall, its a beautiful, sharp knife. But does a boning knife, which serves a less glamorous purpose than kitchen knives and sushi knives, nedd to be this glamorous? I guess that's a personal preference.
