Beautiful knife

Gorgeous knife and extremely sharp out of the box. It feels good to use and feels secure in my hand. While I don't do a lot of sashimi, I do like to do very thin slices of ribeye for soup, and this works extremely well for that, it cuts through the meat with ease and doesn't tear. Can make very thin cuts with this. Very pleased and definitely has a place in my kitchen!

That's a Sharp Knife!

I don't do sashimi, but I do cook, and I was really curious to see if this was a high quality of a knife as described for the value. It is. I was pleasantly impressed with the way it felt in my hand as well as how sharp it was, allowing me to cut paper-thin slices of vegetables with it, for example. I also tried slicing some raw beef/steak, and it went through it like buttah. On top of all this, it's an absolute beautiful knife. The craftmanship on it is very good, and it has remained sharp since i got it and have used it numerous times. I'm loving this knife as well as the great deal it was, too!

A beautifully performing work of art

This sashimi knife is beautifully crafted and incredibly sharp out of the box. I used it on tuna and salmon, and it sliced cleanly with minimal pressure, which really preserved the fish’s texture. The Damascus patterning is stunning, and the handle feels balanced and secure in hand. I have a few Japanese knives already, and this one holds its own. It’s definitely designed for precision rather than heavy-duty tasks, but for delicate cuts, it performs excellently.

Very good and VERY sharp

This is a VERY sharp knife made for slicing raw fish, meat and other softer items. You won't appreciate it if you use it for cutting hard things like carrots, in my opinion sharpness doesn't show up there. But for soft stuff like a tomato or fish this knife will cut through it effortlessly and allow you to make wafer thin slices easily with one smooth stroke. The knife is a bit heavier than usual for it's size and is balanced just in front of the handle which makes it very easy to maneuver. It comes with a wood sheath to protect the blade, the sheath contains a magnet to make it stay on the blade. Also remember to always wash off the knife and dry it completely before putting it away.Also if you want to sharpen this knife please don't use one of those cheap carbide sharpeners, they will end up putting a very rough edge on your knife that will cut but not smoothly. Basically, if you pull one of your knives through a sharpener and it feels like you are dragging it along something rough, then it's not a good sharpener. For good knives that need a fine edge it's best to sharpen them on a sharpening stone or diamond plate.You want to use a wood cutting board for sharp knives like this one. A plastic, glass or metal board will cause a knife with a fine edge to get dull very quickly. This is not the kind of knife you want to be banging on the cutting board like you see on some cooking shows. If you're smacking it on the board and making a loud noise, you are just dulling your knife. If you want to know the kind of slicing this knife is made for, watch a YouTube video showing how Sushi and Sashimi are made to see the type of cutting this knife will do best.For cutting and rapidly chopping hard veggies you want a Chinese or Japanese vegetable cleaver/knife. If you want to cut bone, get a heavy butcher cleaver.

Beautiful, sharp and sturdy

I've been looking to get a quality knife for cutting vegetables and meats and this looked like it would work for me. I know it is supposed to be used for sushi but it works perfectly for me. It is very sharp and has a full tang through the riveted handle. The handle is fiberglass which works really well as it doesn't absorb anything and is easy to clean. The handle is large enough to give you a good grip and control. It looks wonderful and even though it is very sharp I was able to use my sharpening stone set to put an even finer edge on it. It holds that edge for a very long time which gives a good indication of the quality of the steel.

Overpriced for the quality level

I'm not impressed. In my opinion, this is an overpriced knife for the quality. Admittedly, I am in a foodie household with a lot of high-end cookware, espresso gear, knives and other kitchen products. Investing in excellent products makes cooking a joy, rather than a chore. This knife is visually appealing. I think the blue handle is gorgeous and I can appreciate the styling of the blade. Unfortunately, I don't love the handling of the knife. The grip of the knife is not comfortable and the shape/material could cause your hand to slip. For me, the balance of the knife is off. I don't find that the blade keeps an exceptionally sharp edge.Hopefully, others have a better experience with shipping. My knife came with no exterior box, just a shipping label on the exterior of the knife's packaging. The packaging was not taped closed or secured in any way. So, it arrived partially open!
