1/8" vegetable and 3/16" bone cleaver

The review is for vegetable and bone cleaver. The product specification for the metal is German steel. I didn't know what the difference is but it's related to the hardness of the steel. Too hard will cause the edge to chip and too soft will dull quickly. This has the hardness spec of 58 +/- 2 which is the same spec as wusthof knife. Therefore per spec, this is equivalent to wusthof cleaver with the cost that is 10x less than wusthof. The quality is decent, there's no gaps between the handle and metal. The transition between the handle and metal is relatively smooth. There's are no blemishes. The brand symbol is inked on so I'm sure it'll wear off sooner or later but that's not important. As for the function, the knife is super sharp out of the box. No issues cutting through a tomato and slice through paper with ease. It is a cleaver so it heavier then a chef's knife and uses gravity to chop. The center of gravity is right in front of where the metal tapers off to the handle. The bone cleaver has a spine thickness of 3/16 inch and 1/8 inch spine for vegetable cleaver.I've used cleavers most part of my life. My parents passed down their prized cleaver which is not as fancy as this but with a worn wooden handle that cost $15, 30 years ago. This cleaver is much heavier than that which will require some getting used to. Overall, I appreciate the price and the quality of of this set.

More heft than my 8" chef knife

Always associated cleavers with butchers but seeing how food is prepared on my trips to Asia has made me curious about the advantages of using a vegetable cleaver and a meat cleaver as opposed to a chef knife. This is really exquisite cutlery. I will be looking for videos that show me the proper and best ways to use these two new kitchen tools. Tenderizing and mincing less expensive cuts of beef is of special interest. I have been able to season certain cuts well but even after slow cooking at low heat, the meat was still not as tender as I would have liked. Most stir-fried beef dishes that I have eaten in Asia have not been made from prime cuts, so I think the secret is in the way the meat is tenderized and cut. This product was packaged like a Matryoshka doll ie. box with in a box. I think I had to open either 4 or 5 boxes in order to get to the box which contained the two cleavers. That box was not much larger than the length and width of a cleaver. The outer box that was labeled for delivery was maybe 12"x 18" x 6". There was no chance of this product being damaged in normal shipping. If you gift this to someone who loves cooking, they will be overjoyed. Plastic blade sheaths like the cardboard sheaths the knives were packaged in would really be beneficial in terms of storage and safety. Not everyone has a suitable knife rack or available countertop space available for one.
