Another great Cangshan knife

I am absolutely impressed by the design, function, and quality of Cangshan knives. They really are competing against the big boys and doing it well.Having spent 20 years in the restaurant business (retired, working chef), I've spent untold hours using a variety of boning knives, but mostly my Wusthof. The Cangshan knife is right up there and, possibly, more ergonomic. There is just a fit between a boning knife, your hand, your wrist, and your arm, that when's it's on point, everything is one, functioning tool. The Cangshan is like that.Build quality is top notch. Fit and finish is near perfect.If I could have the entire NAKA series, I'd be a happy camper!5 stars. You can't go wrong with this knife.

'Seems' fancy. It's a basic 7 inch knife to me...

I do enjoy this knife. I like the shape and the size for what I'm using it for which is light carving/slicing duties. The handle scales are fit well and appear to be a micarta material based on the slight patterning I can see in the surface using the right light angles. The shiny metal of the bolsters and the tang as well as the decorator scale pin are nice touches as far as appearance goes.Utility-wise, the steel has held an edge reasonably... In relation to other budget knives I have. The steel is softer and has required more frequent sharpening than knives I own from flagship companies, using well known high grade steels...The damascus patterning on the sides of the blades is attractive. I notice that the patterning stops much shorter of the knife edge than I typically would expect uniformly folded damascus to show. Additionally the contrasting colors are mild compared to other damascus patterned steels I'm used to.When I look at the spine of the blade, I see it is one solid polished color. I would expect to see the layering of folded damascus when I look there...Overall, if you're looking for a 7 inch, bellied, nice looking carving knife for light duty, I would consider this one along with other offerings priced no more than $30... although some of that price in the case of this knife would be for the look, I feel. However, this knife is priced nowhere near $30 I notice...I enjoy this knife. I enjoy even more that it was offered to me for review. Even then, I don't think I'm getting a great bargain when it comes time to pay the income tax for receiving it...I think you get what I'm saying here... (three stars...)~Cheers!

This is an attractive, well balanced boning knife from cangshan. I think cangshan crafts beautiful and sharp knives, but wish they had a more textured grip. This is especially true of their boning knives. Watch my video review for a demonstration including a paper test.

Love it

I cook a lot and am very picky about my knives. I am not a professional cook although I did do that when younger. I have more knives then I know what to do with because I am always looking for the perfect knife in my price range.This knife is great! I love it. It has a great weight and is pretty well balanced. It is very very sharp. It is easy to handle and maneuver. I think it will hold up well and as I use it more I will update this review if I find any negatives about it. For now, this is in my primary set of knives.
