I’m somewhat unimpressed.

This knife looks really nice but I question the function. it’s definitely heavy duty with a sturdy spine, and what appears to be a legitimate edge. my problem is that it doesn’t seem to work half as good as my Shun knife? It seems to be way more labored going through vegetables than what I’m used to.

I am not a professional chef, but I play one in my own kitchen to an audience of one. I only cook when I feel like it and I only feel like cooking when I know it's going to be an enjoyable experience. A beautiful sharp chefs knife is at the top of list and have several. My most used chefs knife is a 6" Shun, which has a very thin blade and incorporates 68 layers of stainless Damascus steel. My second most used knife is this Canshan 8" rocker. I find myself switching back and forth between the two, depending on what I'm cutting, or where i'm at in the cut. For example, to dice a large onion or cube a large potato, I first cut it in half. The 6" Shun isn't easy to control for that first top to bottom cut, so that's where this Cangshan NAKA Series X-7 comes in, and more often than not it's easier to just move right on through the process of dicing and slicing with it, though sometimes I will switch back and forth to the smaller Shun.A good chefs knife will be your most used item in the kitchen and frankly, it's a personal thing. The best chefs knife is the one you like best, period, full stop. You have to be happy with the way it feels in your hand, how it cuts, balances and maneuvers as your skills improve. I also think it's a good thing to be happy with the overall appearance of the knife. To me, the NAKA X-7 8" Chefs knife hits all the metrics. From the 67 layers of Damascus steel right down to the copper mosaic rivet, blade design, etc.I especially like the hollow edge which is a more common feature to Santoku knives. This helps break the airlock or "stickiness" that often occurs when cutting harder vegetables like potatoes, squash, etc. Most important though is the razor sharp - and I do mean razor sharp - edge that allows the blade to effortlessly glide through tomatoes, chicken, you name it. Any knife demands respect, but using a knife this sharp which is completely capable of removing one of your digits with little effort, well...let's just say it keeps me grounded, centered and focused on the task in front of me.Lastly, I'll just add that I'm completely self-taught, but am always watching videos of the experts and short training tips on YouTube showing proper knife technique. I love to learn. To me it's about the journey and hopefully for you as well. If you don't enjoy this stuff, just buy a vegetable chopper and be done with it, or stay out of the kitchen altogether. And to that I'll add that I've acquired an entire set of the Cangshan NAKA series knives. They are a joy to use and with proper care and use, will help make many beautiful meals to share with your family and friends. I even purchased a Dalstrong knife roll-up to carry them with me when I travel. Truly, I can't say enough good things about this series of Cangshan knives. They are among the best in my book.
