Comprehensive set. Comfortable round handle. High quality steel.

This is a big set of knives that takes up nearly a square foot of counter space (14.5" D x 8.6"W). And stands nearly 15" tall to the top of the knife handles. So, it occupies a large section of counter space.The wooden block is much shorter at 11" and sits at an angle front to back. The top surface of the block is also beveled side to side. These angles really help when removing knives from the block.The knife selection includes nearly every knife I've ever seen including some unusual offering: 3 types of cleaver, a fillet knife, a boning knife, 2 types of cheese knife, a tomato knife, an old-style butcher knife and a Utility knife which has much of the blade removed to reduce friction and grabbing.Without repeating what is printed on the website, it includes all the knife styles and types I'll ever need.The knives are built with a well-respected steel alloy used in many German brands. The steel is easy to sharpen and can accept a very sharp edge. Remember, it does take some simple maintenance to keep the blades sharp. This steel is a good compromise that can be very sharp but capable of taking some rough use without chipping or cracking. It's also easier and less time consuming to sharpen when compared to some of the more exotic steels.The knives are built with a full tang which means the blade steel is shaped to pass completely through the handle. The width of the tang matches the width of the handle grips. You can see the steel on the top and bottom surfaces of the handle. The handles are then double riveted to the tang. This is the strongest form of construction.The handle grips are made of a strong plastic that resists chips, cracks and splits. In comparison to German knives, which typically use slab style flat grips, these grips are round in shape. And very comfortable to hold even when your hands are wet and greasy. In general, the knives have a very robust build.These should last more than a lifetime. Never place these knives in the Dishwasher. It's bad for the handles and bad for the steel.Most of the knife blades in this kit have a heavy rear bolster. This is a heavy section of steel where the blade meets the handle that runs top to bottom at the back edge of the blade. This has few functions 1) it makes the blade stronger and stiffer 2) it keeps your hand from sliding forward and contacting the back of the blade 3) It adds weight to better balance the knife and it 4) adds comfort and styling - classic in most German designs.7 of the knives don't have a bolster - very common in Japanese designs. With these knives the blade edge continues all the way to the handle. The existence of the bolster has no effect on the function, but it may impact how the blades can be sharpened. There are articles on the web concerning sharpening.The knives come pre-sharpened with a very sharp edge. They feel good in the hands. They have a solid weight and feel balanced front to back. The variety of shapes and sizes really comes in handy when making large meals with a varied menu. There are small and large slicers for the meat as well as Chef's knives for prepping the vegetables.For dinner parties the steak knives are sharp (not serrated), finely shaped and lightweight. Of course, you have the medium sized serrated sandwich knife and a few paring knives that will see daily use.You'll be amazed at how quickly you get used to the variety and find yourself reaching for just the right knife.The knife set meets the descriptions and images on the webpage. The steel used in the build is a good choice and something that will last for many years through numerous sharpening's. It is tough and can take normal kitchen work in stride.The look of the knives reminds me of the traditional German brands with the exception of the rounded handles which I like. In your hands they are sharp and functional - very nicely balance.The knife block is big but looks impressive in the kitchen. You will get used to the assortment very quickly. These are beautiful tools. I'm very happy with my set. If you have the space and want a comprehensive set of knives this is a very good set to consider. Very nice.

Exceptional quality for the amount and the price.

I finally got around to opening this box. After moving around I finally settled down in my own kitchen and got to use these, and let me admit: I'm blown away. The quality and the quantity is incredible. The steel is very well pressed and while the blades don't "balance" they do cut very well. There are probably more knives in there than you'd need in your entire lifetime of culinary adventuring, however it's nice to have so many options and steak pieces available. Ideal for that BBQing man in your life or that aspiring home chef.

An absolutely INCREDIBLE display of craftsmanship with few flaws

Honestly, just trying to describe this set is going to prove to be difficult because it's just SUCH a flex to the rest of the knife world and so over the top.It is, without question, the heaviest knife set I've ever had in my life. The box had to weigh 50 pounds. What's inside, however, is craftsmanship that rivals any of the better known brands out there that every foodie can name as a staple. The forging work on these blades is on par with anything from other German brands like Zwilling or Wusthof - or anything from Japanese brands like Shun or Tojiro. The balance on the few blades I've interacted with so far has been absolutely perfect. The full tang construction with the counterweight at the tail of the handle does a lot of work here. They came out of the box reasonably sharp, though I was able to improve them by at least 20% by giving them a quick sharpen of my own. It appears they've got 16 degree edges from the factory, but I sharpened them to 15 for better precision and sharpness at the cost of some edge retention. But that's to be expected of any knife brand. Great full tang construction. Aesthetically pleasing enough - though if we're being honest, they do have the look of being more utilitarian than artistic.Worth noting that this particular line of Cangshans uses X50 steel - more of a mid level steel that's easier to sharpen - whereas some of their other series use RWL34, which offers superior edge retentionThe storage block is solid walnut - not something I was expecting. It's attractive and going to be durable, but it does have the downside of adding enough weight to the set that moving it around the kitchen to clean under it is going to be a real chore.There are a couple true negatives. I have fairly large hands, and I do wish the handles were a bit longer. I can deal with that, but one thing that does bother me a bit is that the knives feel a bit round to me - and keeping them indexed isn't as easy as I would like. It's enough of a bother to me that I almost considered taking a star off for this.I have a couple of pieces from another line of Cangshans - the Kita series - and I really wish they offered a set like this in that series, both because I found that series to be better suited for my hand as well as the blue with the mosaic pins to be SIGNIFICANTLY more attractive than the Olympus.The other thing I want to say about this set is....as I mentioned above, this set is basically a flex. Let's be honest: 36 knives is WAY more than any human needs. I'm a serious foodie, a very advanced home cook, and a knife collector, and this set almost doubles my blade total. Nobody needs 3 chef knives and 3 paring knives. Nobody needs that many utility knives, nobody needs a carving fork. Most people don't even know a tomato knife is a thing, etc. There's just SO MUCH stuff.That said, there's SO MUCH stuff, so even though $800 seems like a lot (and it is for most people), it only comes out to $23 a blade (I'm not counting the storage block or the honing steel because they're unnecessary, so 800/34. That's an AMAZING value. Like...I've got individual blades that were almost that much. Incredible.
