Great Steel at a great price

I bought these last Prime Day on a deal as I already use a fair amount of Cangshan knives in day to day life. I cook daily to a fairly high standard as a home cook and have always preferred using a vegetable cleaver for quicker prep. I find them more efficient to use than chef knife or Santoko unless you are making finer cuts and only specifically on vegetables.The material of the blade is exactly the same as some of the other higher end german steels (specifically the Wuhstoff classic among others) thus it retains its edge and doesn't chip easily. With a simple honing a couple of times a week, depending on use, the edge is retained and the sharpness is ensured to last longer.The meat cleaver is the perfect size for a home cook with the weight being in the heel of the knife which is great for cutting bones etc. The weight of the knife is also heavier which helps in this scenario however if you were using this specifically as a butcher knife your wrist and hand would get tired way too quickly with the weight.Pro's (of both)Both are well forged with a solid and proven steel used by knives twice the price. Both retain their edge and are easy to maintain with basic care i.e. no dishwasher, honing and properly sharpening when needed. Also the edge is razor sharp pretty much out of the box and I would imagine this will surprise most given the price.Con's (of both)Both knives are on the heavier side of the spectrum. Much more so than more premium brands out there. This will become tiring if you are using these longterm. For most home cooks this won't be a massive problem but use over a longer period will tire you.General construction can be a bit hit and miss on occasion. These specific knives were fine but I have looked at other cangshan knives and they do share common flaws around the g10 grips, minor cracks or not fully bonded.OverallCan't be beaten for the price due to the steel used and the general design. If you are using as a home cook and want a razor sharp edge, simple design and a solid steel and this style of cleaver, then this is definitely a contender on the list.

Awesome Knives

Cangshan makes excellent cutlery. I have their larger set, somewhere around 18 items and, love it. I added the cleaver set just so I would have everything in a knife set. The steel is very good, I compared them to my previous $200 set. I tapped the knife on my quartz counter and got a high-pitched "ting", perfect compared to the "donk" low-pitched sound of my previous set. They remind me of the Henkles' German-made(professional)knives regarding quality.Update: after using them for a while, I do believe these are some of the best knives I’ve ever used. They stay sharp, make precision work of anything they are put in use for. Properly cared for these knives will last a lifetime (or two).

Underrated brand - Worth The Investment

I grew up in the kitchen (family business) and love to own good kitchen tools. I have about 40 different knives in my kitchen. I've been using Cangshan brand for about 5 years now. I have several different knives from Cangshan and none of them had disappointed me in terms of price/quality ratio. With that being said, I won't hesitate to recommend Cangshan knives because of their consistent quality and more bang for the buck.I whetstones my knives at least every six months if not quarterly, and the main word is whetstones when it comes to quality knives.Lastly, with the hardness (hrc) level b/t 57 - 59, it's easy enough to sharpen and generally hard enough for your most daily use in our home cooking. Again, it's just a personal preference.Btw, the Chinese cleaver is one of the most versatile knives that you will find. Once you know how to use it properly, it will become your go-to knife.Enjoy & happy cooking!

Great knives for the price I got them! Some minor issues.

I am picky about knives. However, I got this set for $25 due to a cyber-Monday deal, so figured what-tha-heck. Out of the box, they were OK quality. The meat cleaver had a minor defect in the edge and it didn't look like a continuous grind. Not a deal breaker.They slice paper easily out of the box, so satisfactorily sharp. However, good isn't good enough with my knife-focused OCD. I pulled out my whetstones (1000 and 6000 grit) and strop and got a nice shiny professional edge onto the knives. Cuts everything like butter. Even semi-frozen chicken with the meat cleaver.The steel is good quality, but not great. Takes an edge easily so it is fairly soft. After about a week of use for dinners, I notice a bit of dulling. Enough that I need to sharpen them monthly. I also only use each knife for its respective purpose. The Chinese vegetable cleaver is a semi-flat edge SLICING knife people. Try to cut through bone with it and you're going to have a bad time. Not built for that.The first photo is the box they come in. I use it to store them. It's nice enough. 3rd photo shows the slight defect and the edge quality out of the box. Not noticeable to a layman, but visible to an enthusiast. The last photo is the edge after I put them to the stones. That's my very high expectation of what edge development looks like.4/5 is pretty good in my book. A bargain at $12.50 per; Worth it at $25 per knife.
