This model series from Cangshan are very well crafted and a pleasure to use. I've never seen a "peeling" knife like this before so I didn't know if it would be good for anything. Now I love using for all sorts of things. The unique shape makes it great for scoring surfaces of whatever you're working on. Not looking forward to trying to sharpen it though. Inside curves like this are tough.
Nice weight, fits in hand for full control when making precise cuts. Very sharp out of box. Sheath kinda gimmicky, would prefer one that fits inside a chef coat arm pocket.
This is my go to knife if not using my chef's knife. All others have become "useless." People get cut struggling to use dulled knives, not sharp ones. This was a real treat for me and am very happy with my purchase! This cuts through things like everything is butter. Light weight and well balanced it comes in a great knife shealth(for a better word) that I store it in at all times. The quality and frequency of its usage made the price reasonable for me. Both of my knifes come from this company and I have been very pleased.
This is an excellent, sharp knife. It is very handy doing tasks that other knives struggle with such as removing the ribs from peppers, skinning apples, etc. Highly recommended.
