I can't say enough good things about this knife! I have had it for a while now and it has become my go to knife! I use it all the time and I haven't had to sharpen yet! Fits nicely in my hand, seems well balanced and very well made!
I have a large collection of kitchen knives, some dating back to the 1950s. Many knives I have used over the years have been donated to charity upon being replaced by better knives.The Cangshan TS Santoku has become my favorite knife for cutting, chopping and slicing. The knife uses Sandvik Swedish which allows the knife to be hardened to provide sharp edge that stays sharp, but unlike some Japanese steel knives, it is not as easily damaged. In my kitchen, Japanese knives would be too brittle. Cangshan knives are made in China, but the workmanship is immaculate. Although more expensive than knives from the local discount store, this one is well worth purchasing.I also have several Cangshan S series knives with German steel, including a Santoku knife, after using the TS series knife, I never reach for the S series Santoku. I still use other knives in the S series collection. If you cannot afford the TS knives, the S series knives are still good, but if you can afford the TS knives, I recommend them.
I love this knife. It's very sharp, has a wide enough blade that I can chop or cut thru things w/o my fingers inhibiting the cut completion, and it is nicely balanced and easy to work with. I like being able to stick it on the side of my fridge by the stove rather than in a drawer somewhere. Recommended.
Has heft. My new go-to knife.
