My favorite knife in the block.
Bout this to replace a knife in our block that broke. It's extremely sharp, use mostly for trimming meat but will use on other things as well. Good value.

We seem to have turned into a Cangshan family! Couple years ago we got a full Cangshan set for my parents, this year a full set for my sister, and I purchased this standalone carving knife as a gift for my husband. Great quality, they sharpen well, very functional, good value for quality.

Spectacular knife at a great price.
HOLY COW! The edge on this knife is incredible, and very comfortable in the hand. I find I can slice paper-thin poultry and beef (amazing on brisket), with this knife. I've never really been one to pay premium price for ANY knife, as I'm not a professional. As such, I can't speak to the professional on behalf of this knife.For the 'amateur chef' or (like myself) the culinary laity, this is a SPECTACULAR knife. After having used it for weeks, I can also state that it holds an edge VERY well. I have yet to feel the need to sharpen it (I can hear the pro chefs out there cringing).We use wooden cutting boards (Acacia and bamboo). These tend to dull knives less than other types of cutting boards. The knife is a full-tang knife, sandwiched between a VERY comfortable pair of handle sides (for us). For professionals, the shape of the handle is important, and it's my understanding that professionals tend to stay with a specific type/shape for their handles. For me, there are several different shapes that feel 'good' in my hand. This is one of them.One thing I've learned, over time, is that knives should be purpose-driven, in their selection. This knife, therefore, is dedicated more to meats. Fruits and vegetables will generally be prepped with a different knife, and one of smaller size (shorter blade).I like that it came with its own magnetic storing sheath. For our 'every day' use knives, we have a 'set (linosoro, I believe). For some things, however, function demands a superior product. Despite being a forged, full tang blade, it seems surprisingly light. While I don't generally pay this much for blades in the kitchen, I can honestly state that I find this particular knife to be an exceptional value (from the standpoint of laity).Final thought, here: I find it difficult to identify anything about this knife of which to be critical. A more experienced chef or aficionado might be a better source for such a thing. While I spend a good deal of time in the kitchen (I do most of the cooking), my need for such a tool remains limited.Given my limited scope and experience, my opinions should be take with the proverbial 'grain of salt.' With that stated, I find this to be a substantial value, given what little I know about professional cooking. Still, I wouldn't give up this knife, easily. I love it.

Good quality knife
This knife is the real deal. Right out of the box it is slicing sharp and ready for work. The feel in the hand is great because it's balanced on the bolster like it should be. I'm not a fan of the "hook" in the bolster and the bolster is a little big. Bit, these are preferences. Its functions great though! Love the look of the provided wooden sheath too.Only lost a star for not being up front in the posting that it's made in P.R.C. (People's Republic of China). Calling it Swedish steel doesn't mean it is made in Sweden but not disclosing that it's made in China anywhere that I could see on Amazon feels sketch.Overall though, you are getting a good knife at a good price.

Don't be fooled, this is no cheapo Chinese brand
For some, knives are a matter of design and comfort, for others, it is quality. But if you want a really great knife, you will look for a combination of quality and design that feels natural in your hands, easy to use (cut), and low maintenance (keeps an edge). Price range can run into the hundreds of $. That being said, you can get a really great knife from a number of manufacturers; you just need to take the knife out for a test trial and choose the one best for your needs- slicing, filleting, carving etc.This knife's best features that are important to me:1. The warranty- Taken right from their website, Cangshan has a hassle-free lifetime warranty if purchased from a "authorised Cangshan Cutlery retailer".2. Reputation- Cangshan has an informative website that tells the company story. They are becoming a more popular brand of quality kitchen knives. Having the lifetime warranty certainly helps build a reputation for quality.3. Quality- Not only does company reputation and warranty ensure quality, but the material used to manufacture the knife. This particular knife is made with Swedish Sandivik 14C28N Steel. Cangshan has partnered with the Swedish company Sandvik which has a 150 year+ reputation as an industry leader in cutting tools and steel alloys.4. Design- This knife feels great in my hand and comes with a nice protective (and attractive) sheath.This Cangshan carving knife is that balance of quality, comfort, design, and function that I mentioned above. One of my favorite knives is an inexpensive, all metal knife that I sharpen regularly. But that one is used mostly for fruits and vegetables, not for carving. This knife just filled the void I had for a great quality carving knife, and will be replacing my faux carving knives that I have fumbled with for the last xx years.Normally I think of Chinese products as being cheap or a knock-off from reputable, well established companies. Not so with Canshan, they appear to have "carved out" their slice of the knife industry by building a solid reputation. This is an excellent value and hopefully may be the last carving knife I will need.
