The 10-inch blade recalls the traditional precision of Japanese sashimi knives, and also finds its modern echo in the design and materials of the blade and handle. In a recent dinner prep, I quickly transitioned from thinly slicing the salmon to carving tenderloin slices, a testament to the knife's adaptability. That narrow blade not only sliced the fish cleanly but was adept at handling larger meats with just the right application of force.Very pleased with the finish and feeling in hand, the octagonal handle (a nod to traditional Japanese designs) is a G10 like material, comfortable, clean looking and has a nice wood-like look. I would say holding it it feels a little top heavy which I liked.The gray wood magnetic sheath adds sophistication and make this more giftable in a addition to the decent (single use) box it comes in.The Damascus pattern is subtle, authentic looking and pretty!I'm certain I'm going to get many years of good use out of this knife and certainly recommend it.
This 10-inch Sashimi knife from Cangshan is really, really nice.The length is welcome as it allows broader movement when slicing; which actually feels nice. It feels balanced in the hand and the handle provides a good grip. Visually the blade is beautiful with the Damascus patterning on the blade. I cannot tell if the patterning is due to the creation process or if it is laser-etched on but overall it still looks great. From I understand, Sashimi knife blades are beveled but this Cangshan knife is honed on both sides of the blade like a regular knife. Cangshan does provide a sharpener with a proper 16-degree angle for this blade, which I will be purchasing.Overall I really love this knife. The sharp blade’s cut is a dream and the broader strokes when cutting are most welcome. Definitely one to consider.
This Yari series Damascus knife is beautiful! Great contrast between steels and long easily visible lines. This knife is almost overly sharp out of the box. Honestly, probably one of the sharpest knives I've ever reviewed. Very clean cuts, no drag, and a perfect piercing tip just doesn't really sum up what a pleasure it is to cut with. The handle is well constructed and comfortable for my hand, with a wonderful mosaic pin to add some contrast to the soft grey handle. Awesome knife!
I’m fed up with these knife sellers advertising Damascus steel knives with X-7 or VG10 core. It should be X-7 high alloy Stainless Steel knife with a smear of Damascus steel on each side or a printed Damascus pattern on each side. I don’t believe this has undergone the acid etching process of true Damascus steel because we should see a hint of layering even on unetched part of the knife. This is a stainless steel knife and who knows what this handle is made of. It’s attractive but it is a print of some sort on this handle which looks cheap. For this price knife I’d expect a solid Damascus steel with a solid wood or bone handle. BUT! The bottom line for this knife is that it’s one of the sharpest knives I’ve used. How well it will hold that sharp edge is yet to be seen. I cut a lime with it yesterday and I barely used any force. The blade did most of the work which is how it should be. It is a pleasure to use but I would not pay this price for this particular knife with printed pattern handle. It also comes with what looks like a wooden sheath with magnets inside that grab and guide the blade in keeping the edge off the wood. Really cool feature. X-7 is described as a proprietary high alloy steel. I wish they would focus on that and explain what that is since that is what this knife is made of. Why all these knife sellers insist on implying these are Damascus steel is beyond me. In fact, it may not have any Damascus steel at all and the pattern may just be etched onto the blade. If it’s there, the Damascus steel on this knife is akin to jewelry that is gold plated. It’s just not solid Damascus. So don’t buy into that marketing. But it is a really nice, sharp knife. If they had advertised it as a X-7 high alloy stainless steel knife, I would likely give it five stars. Even the paperwork that comes with it calls it “a 67 layer Damascus pattern across the face of the proprietary X-7 high alloy blade”. Because they can’t honestly say this is a 67 layer Damascus steel blade. Just know what you are buying.
A truly beautiful knife with a very cutting edge. I don't know what the handle is made of but it feels nice. This knife has a perfect balance in the hand, the weight is just right. The blade is so beautiful, and it cuts thru meat like it's butter. It comes with a real good quality sheath. The striated pattern on the blade is amazing in appearance.
This knife is make of quality material. So far it’s been nice and sharp! Highly recommended!
