I have been looking for a good carving ser for awhile. This one is fairly expensive, but is still a good value. Very sharp but I sharpened the knife all the same since a carving knife needs to be razor sharp. Thanksgiving was the test and the set performed as well as I'd hoped. Recommended!
Gangshan is a name I'm quickly becoming familiar with when it comes to high quality excellent knives. These are fantastic. I've used other carving knives in the past and they don't compare to how smoothly this cut into meat without me having to exert too much pressure or do a sawing motion back and forth. These blades remained sharp for a very long time without needing me to re-sharpen them immediately. I also love the wooden box this comes with because truthfully I don't need my carving knife year round but at the same time I was getting tired of me having to keep them in their original cardboard cases tucked away and not being able to find them half the time. With this they're well protected but also in something that isn't easy to misplace and that I can put in a shelf or cupboard for easy access if the need does arise. Also helps to keep my knife sharp. I tested this against one of my other knives that's in a similar shape and I was surprised by how light this felt comparatively. It carries a sense of power in it but wow does it feel feather-weight. Cuts through even the toughest meats like they're butter. You can't even argue price. From blade sharpness to the appearance of the knife to the way its well designed and crafted to be the best in its purpose you don't feel like you're spending too much at all. Makes for an excellent gift if you've got someone who's a very enthusiastic cook in your life.
I recently picked up the Cangshan carving knife and fork set, and I’m genuinely impressed with the quality! The fit and finish are excellent, everything feels precise and well-crafted, from the sleek lines to the smooth edges. The handle pattern is absolutely gorgeous. The knife is razor-sharp right out of the box, slicing through meat effortlessly, and the fork pairs with it perfectly for clean, controlled carving. They feel fantastic in the hands, too, balanced and comfortable, making them a pleasure to use during meal prep or a big dinner.The hammered Damascus look is absolutely gorgeous, giving the set a high-end, artisanal vibe that elevates its presence in the kitchen. I’m not entirely sure if it’s true Damascus steel or just a lasered pattern, but honestly, it doesn’t detract from the appeal either way, the aesthetic is stunning, and they look like a premium set regardless.The price is a bit steep, which is my only slight hesitation. You can find authentic Damascus steel options at this range, so that’s worth considering. Still, I don’t regret the purchase one bit, these are a great set, and the performance and style make them well worth it. If you’re looking for a carving duo that’s both functional and beautiful, the Cangshan set is a solid choice! Highly recommend!
I was originally intending this as a gift for our next Thanksgiving host. Now I hope they don't read this review, because I think I'm going to have to keep it for myself! The set is pricey but my understanding is Cangshan is putting together some top quality knives. These definitely look the part.. the Damascus finish is just stunning, and the carving fork is substantial and has some incredible balance and heft to it.The only downside is I haven't really had a chance to put these through the paces yet. If they function half as nice as they look, they'll definitely be a permanent part of my cutlery collection.
This set is very high quality, similar to my kita set I have from Cangshan but with a different aesthetic. These keep their edges nicely, and are perfect for roasts, grilling, smoking, etc.. The box is very convenient for transporting the knives and storing them without a block. It's especially nice for bringing them outside to a grill/smoker.
