This set of four steak knives is connoisseur quality and is sure to impress both dining guests and knife fanciers. The 10" long knives (5.5" steel blade with 4.5" handle) have noticeable heft and comfortably fit large hands. The knives arrive from the vendor impressively sharp (be cautious performing the thumbnail drag test) and will stay sharp: the proprietary X-7 steel (similar to Japanese VG10 steel) is hardened to HRC 59-61 with a fine edge that slices meat like butter. The knives are full tang with machined stops at the blade base and the handle butt; a copper and steel rivet plus a red band decorate each wood-grained grey composite handle. The G10 composite handle is one-piece molded onto the full tang and has a ribbed hexagonal shape for good grip.The package includes four knives and an ash wood storage case. The storage case is grey-painted with a patterned lid, the case fitted interior is plush lined. The storage case lid completely lifts off the base; strong magnets secure the lid to the base for carrying and storage. The knives are individually packaged in cardboard sleeves with point guards, then individually plastic bagged. Four knives are cardboard boxed along with desiccant packs, the wood storage case is polyfoam wrapped, and both are packaged inside a cardboard display carton.These knife blades have a Damascus steel pattern reflecting 67 layers of folded X-7 steel. These knives lack the "irregular zebra pattern and topography" of traditional Damascus steel where soft steel layers acid etch faster and darker than the hard brittle steel layers. These knives exhibit modern industrial precision: a sheet of X-7 steel has been machine-layered 67 times (more predictable than brute force hammering), knife blade blanks have been cut from the layered X-7 steel, and the blade blanks then are artfully ground so the damasking pattern mimics the blade shape. The four knife damasking patterns are similar but not identical, reflecting folding process miniscule variations. And the 67 layers reinforce each other in a manner similar to plywood.The X-7 steel is moderately magnetic, can discolor, and merits quality care: hand wash the knives in mild soap and water, hand dry, and ensure thorough dryness before storage. Thorough dryness before storage also preserves the ash wood storage case. The knife HRC 59-61 hard blades will remain sharp through much use; eventually they will require sharpening by a knowledgeable person. And these Damascus steel steak knives will motivate good conversation during knife fancier steak dinners.
Composition: Damascus steel blades with wood handles. Ash wood box. You have to be serious about your kitchen utensils to consider spending $280 on four steak knives. Those who care about cutlery know that really good knives like these should literally last a lifetime with the proper care. Only time will tell if they do, but they are made to last, extremely well constructed (plain forged edge, one copper rivet, full tang) and carefully packaged, with a made-to-fit box to store the knives properly in the kitchen. These knives are HRC 58 +/- 2 on the Rockwell Hardness Scale, while most consumer kitchen knives start at 50 HRC and go up from there. A professional cook looks for a knife with at least 55 HRC, so YARI is pro quality by definition. The knives are also beautiful, elegant, and well-proportioned., everything a serious chef wants. They come with instructions on how they should be washed and stored; if guidelines are followed, these knives will serve for decades.
They’re pretty, they’re sharp, they cut through anything but you only get four of them for that price? I’m checking my guests pockets and purses after they leave to make sure no silverware was missing. I’ve used knives that are on par with this set for a fraction of the price.If you can afford them, by all means you’ll definitely enjoy them. But considering the shape most of the world is in, my money can go further elsewhere.
I will start off by saying these knives are absolutely gorgeous. The traditional Japanese design combined with a very ornate pin structure and beautiful handles make these things pretty breathtaking to look at. They would make a fantastic gift for most people who don’t know a lot about knives that’s for sure. And I want to be clear these are not bad knives. They are just probably more expensive than they need to be. But then again so is inkjet printer ink and energizer batteries and Gillette razor blades. Sometimes you’re paying for the name and sometimes you’re paying for the appearance and sometimes you are paying for quality. Hopefully you’re paying for quality. In this case you’re getting a really good solid knife but I fear you’re overpaying for quality. The fact is these cost in the same ballpark as the highest in Japanese and German knives. And I’m not sure the performance is quite there. But again they are gorgeous and they are good knives. But when you’re looking at the price range of a Fujiwara or a Wüsthof, more than a Shun or Tojiro, I’m not sure I would go with a lesser known name.But if you like how these look and you’re willing to spend the money then more power to you. They certainly are beautiful. And while I do you think they are over priced they are not a rip off. This is not the same as a white box generic Knife that has been stamped with the label. This is a real brand and they are all over the place in terms of price. I’ve had some that are the same prices Victorinox and they are extraordinary but then I’ve seen some that are as expensive as any knife you can buy. This Steak knife et certainly is on the higher end. They come with a beautiful wood gift box and the knives packaged separately any more practical cardboard box. At some point the presentation is worth the money to many people.These are not value knives. And that is not the biggest bang for your buck knives. But they are splashy and they are beautiful. They would make a great gift for most people who don’t have anything nearly this good in their kitchen. But you are paying a premium for appearance and presentation. And that Premium is a little bit steep.Most steel is standardized. You can look up the qualities of any various type of steel like 401C, Sandvik, VG-10 etc. and get extensive material data sheets on its properties. Despite this you have a pretty big variation due to the forging and quenching processes. So you never really know what kind of steel you’re getting until you use it. But generally you have a vague idea.X-7mon the other hand a proprietary creation of the CangShan company. It is somewhat of a mystery and impossible to get any specific information on. I suspect it is some variation on the Chinese version of VG-10 which is 10Cr15CoMoV. The G 10 is a brand name and it is only made in Japan so often they will label their knives VG 10 but it is not genuine. Still the steel is good, and typically from this company I’ve gotten some very good performing steel so they seem to know what they’re doing in terms of forging. The knives seem to perform like VG 10 and sharpen like the G 10 I will say that.I imagine that most people with less experience with knives and steel are going to be blown away by these things. Which is one of the reasons I say they make a great gift.
