The family gathering time of the year is coming up and our relatives all love tons of mashed potatoes and sweet potato casserole. I was looking for a longer, wide blade knife to get through the (endless) cutting chores when I saw the "Cangshan YARI Series 501202 X-7 Damascus Steel 8-inch Chef's Knife with Sheath".I am so glad I ordered it, this knife is potato cutting perfection. The blade is super sharp and strong and just glides through even the toughest potato or jicama or beet. It is a large knife with a handle that just seems to fit your hand. It is hefty, definitely not a light weight. it feels better and glides through better than two of my very expensive Japanese and German knives.The price of $130 is not bad for the great quality you get.

Great quality, very sharp right out of the box

This knife is extremely sharp right out of the box and requires no initial sharpening. It comes with a magnetic storage sheath that won't fall off, but I wouldn't recommend storing a knife of this quality loose in a drawer anyway.I'll update this review if I notice any issues with durability, but this knife has gone through a number of uses without dulling noticeably.If you don't own a sharp chef's knife, and you do a lot of cutting, you really owe it to yourself to try one. Using a knife like this that can cut a tomato, for example, with barely more downward force than gravity is pretty satisfying.

A very nice take on the standard modern Japanese chef's knife

This style of Japanese chef knife--with faux-Damascus steel and Western-style fittings--can be found all over the place nowadays, ranging from the very cheap to the very expensive.This is a good one. The handle, although it's G-10 (fiberglass cloth in resin) is very similar to the handle in my Miyabi knife, which is Micarta (canvas in resin instead of glass). And the steel appears to be a close relative of the venerable VG-10, but a little harder, for greater edge stability on the cutting board.I'm not sure why it comes with a sheath. I guess it's good for people who keep their knives in a drawer. But don't do that.

High Quality Chef's Knife

I have a few other Cangshan knives that I love so I was anxious to try out this chef's knife. It does not disappoint. It balances well in my hand with the balance point being right at the bolster. The handle is comfortable and provides a good grip. The blade is curved so it is good for rocking type cutting motions on a cutting board.It comes with an interesting, wooden sheath. It has magnets in it that hold the knife and sheath together.I waited until I used the knife about a dozen times before posting this review. Edge retention has been great, and it is still incredibly sharp.

Sharpest knife I own

This knife truly feels like a piece of craftsmanship. The design and function of the knife are both high quality. It is the sharpest knife I own and cuts so easily that the cut is over before I realize. The knife is also quite light allowing for easy use for extended periods of time. The handle doesn't look ergonomic but fits comfortably in my hand. The design truly looks exquisite. The cover that comes with it is abit loose but not so much that it would just fall off.This knife both looks and feels premium, I definitely recommend this knife if you are in the market for one.

Nice but expensive

Knife works well. Excellent quality and comes with a protective sheath. Has no issues cutting and seems to work its way through anything that it tackles. Not sure that the price point is ideal. I have a similar knife that cost me 40 bucks and works just as well.
