Extremely high craftsmanship, well made, feels very good in hand, cuts well
This knife set shows an extremely high level of craftsmanship. I review a lot of knives here, and these knives are some of the best I've tested here. They are pricey but the quality reflects it the moment you open the box. The 8" Chef's knife, the 5" serrated utility, and the 3.5" paring knife come in a nice hard sided gift box lined with velvet, excellent for gift presentation. When you lift them out and handle them you can immediately tell that they've cut no corners with these knives. The blades are gorgeous X-7 Damascus pattern that look like the high end cloud patterns on custom knives. X-7 is a proprietary steel which is said to perform the same as VG10 without the brittleness. X-7 Steel has a hardness rating of 61 ±2 on the Rockwell Hardness Scale,In the photos I've posted, the ones with each of the blades resting on my finger show the balance point of each of the knives. The two smaller knives are largely biased toward the handle, which is ideal for deftness and dexterity with precise cuts. The Chef's knife has a balance on the handle right where it meets the blade, giving it a slight bias toward precision but offers a more dominant hand position on the blade for power, as a good Chef's knife does. The next photo in each line shows my hand wrapped around the knife in the natural grip position based on the blade balance to show you how this knife works. I have done this for all three knives.All three knives are extremely sharp. They all pass the tomato test, and can easily and quickly make sub >1.0mm slices of cucumber quickly and consistently. They all have a good weight to them, and for this style of handle, these are polished down and smoothed to the point where they are very comfortable to hold in the hand, unlike 90% of the hexagonal styled handled knives on the market (primarily cheaper ones). The fittings and handle are solid and smooth, which shows that someone took the time and attention to sand these things down and fit them precisely. The detail work is amazing on these knives, well worth the price.My only issue with this set is that the 5" utility knife, while the nicest utility knife I have now, is kind of useless. It's good for cutting things that need serration, like bread. A set like this with two pieces, the Chef's Knife and the Utility Knife, the two most used knives in the kitchen, is a perfect pairing (and is available last I checked). The ratio of use is something like 80/15/5 for these three knives to me. I would save the money and not buy the three piece and get the two piece version instead, and then spend the extra money on a more useful knife made by this manufacturer in the same style.Overall a five star pick. People are blown away when they see these knives and all want their own. Highly recommended; the performance and aesthetic are top notch.
