I LOVE this pan! Makes great crispy pizza!

Right away, as soon as I received the pan, I washed it, dried it in my oven and oiled it... back in the oven on low to bake on the oil. ANY cast iron should be oiled EVERY TIME it is used! It's not a one and done thing. The paper towel you use will get black. It's the iron oxide from the pan. Happens with ALL cast iron! This is a heavy, nicely made pizza pan.I found a couple of tips that make for a nice crust... Lots of oil in the pan... 3 tablespoons. Place the pan on the lowest rack, close to the bottom of the oven and bake at 400 degrees. It fries the dough on the bottom and gives a nice golden crispness while the heat has time to cook the veggies and melt the cheese.I have used the pan several times now and am going to purchase a couple more for family and maybe one to use on my grill. I've tried several other pans, perforated steel, stone, but so far, this one has been the best.

It didn't take me long to get this good and seasoned. I bought it to cook pizza and it works great. I was using a regular cast iron frying pan for pizza but with the lower sides on this pan the pizza just slides out when it's done baking. I've used it for burgers, sausage patties, caramelizing onions, you name it. It's a great addition to my kitchen arsenal. Great value, also!
