Excellent Control and Comfort for Everyday Home Cooking (Not for Bones or Pro-Level Use)
I ordered this 7” Santoku knife because my 8” Classic chef’s knife—while excellent quality—was losing its edge. I had never used a Santoku before, so both the shape and feel were new to me.This knife provides exceptionally good control. It has a comfortable middle weight—just under half a pound—which feels substantial without causing hand fatigue during longer prep sessions. The handle is surprisingly comfortable, and I always felt secure in my grip. The wide blade profile also works well as a scooper for transferring ingredients from cutting board to pan.Unlike a traditional chef’s knife, the Santoku has a blunt tip rather than a sharp point, which helps reduce accidental piercing. Its flat cutting edge is designed for a straight up-and-down chopping motion rather than the rocking motion commonly used with a classic chef’s knife. Because of this design, it is not intended for cutting through bones or for boning meat.I diced garlic and onions and sliced mushrooms and chicken breast. The blade glided cleanly through all ingredients, producing smooth, precise cuts. I experienced no slipping on either my wooden or plastic cutting boards. The Granton holes (the small dimples along the blade) noticeably reduced how much food stuck to the sides.The blade is made from high-carbon stainless steel, which should help it maintain its edge over time. It is also full tang, with the blade extending from tip through the handle, adding to its durability. I appreciate that the seller offers a lifetime warranty on the blade.Overall, this knife meets my needs very well for everyday kitchen use. It would be best for home cooks who want excellent control for chopping, slicing, and dicing vegetables and boneless meats, and who prefer a straight up-and-down cutting motion rather than a rocking style. While it is not intended for cutting through bones or for professional or collector-level use, I strongly recommend it for typical home cooking tasks and feel it would also make a very nice gift.
