This knife has become my favorite in the kitchen. It’s sharp, well balanced and sized for practicality. Good looking as well. It sits nicely in the hand.
I will start by saying this thing surprised me out of the box, it was a much better fit and finish than i was expecting. I am a knife guy, maybe not a snob but i know my steels, and i know how these things are made. I will say for this price this is a good knife. I got this because i was tired of my wife and children using my carbon steel blades and leaving them water or something on it to stain or rust the blade. so this knife fits the bill, VG10 is a great steel with stainless properties, and i should not have to continuously sharpen it like cheaper stainless knives. So far it has been holding an edge like any of the other VG10 knives i have used in the past.Now on to the few down sides, most deals with how it came to me out of the box, the pictures up loaded are from the night i took it out. there are quite a few surface scratches in the blade, which does not effect the function of the knife. But it definitely stick out in an other wise beautiful Damascus pattern. it was hard to photograph but at the tip of mine there is a small dent, it almost looks like the Damascus pattern, it can be felt with your finger tip. still does not effect the knifes function. So ultimately forgivable, just wish it came with out these little blemishes. I would also like the blade to be a bit taller, but that's personal preference as i have large hands and my knuckles will hit the chopping board cutting straight down. it even survived a run through the dishwasher from my daughter. if your not aware you should never put a knife with a wood handle in the dishwasher.All in all i think this is a great starter knife for any new home cook trying to upgrade from what most of the box stores offer.

Overall, this is a perfectly fine knife. I like the heft. The balance is just behind the heel and the handle is comfortable to hold. According to the description, it is made of high carbon steel which is durable and will take and hold an edge. That's really all you NEED in a knife. I (mostly) like the pattern on the blade, as well. The handle itself is pretty and has some nice depth to it. Overall, very usable and has some visual charm.Now, having said that, I think they are trying to sell it as something more exotic than it actually is. Let's take a look at the first bullet point in the description:"[Material usage] Howashin's Damascus knife is made of 67-layer German high-carbon steel."When they say "German high-carbon steel," I'm curious if the steel is ACTUALLY German, or if it's more like a title -- in the US, we have come to know that German high-carbon steel is often used in high quality knives. These knives were clearly made in China. It is POSSIBLE they imported German high-carbon steel, but it seems much more likely to me that they are saying that the steel is of the high-carbon variety exactly like the stuff you see in German made knives. But I can't say for sure one way or the other--they may be on the level here (no points of for mere suspicion).Continuing on, "The real Damascus knife has been hammered through multiple high-strength quenching and forging, as well as vacuum heat treatment, with hardness, toughness and corrosion resistance."Together with the previous statement mentioning 67 layers, it seems we are getting a knife that is made from folded steel. Looking at the edge, though, I have my doubts. The folding patterns SHOULD be intrinsic to the steel itself. But if that's the case, then why is the edge completely free of any pattern at all? "Because it was ground and polished and wasn't re-etched" you may be saying to yourself. That would make sense, but then how/why is there a wavy line between the "etched" part and the polished part? How would THAT work? I think what we have here is a carbon steel core with 67 layers of steel added to the top. Or something like that. I'm not sure HOW we wind up with that pattern, but I again have my doubts that this whole blade was folded and then sharpened. At any rate, I like the pattern all the way to the point that it vanishes at the bottom in that weird manner. That kind of ruins it for me. I don't know if they were trying to make it look cool by doing that, but I would have greatly preferred the pattern to continue all the way down to the edge. 5 seconds of acid etching would bring that back every time it was sharpened (assuming your local knife shop will do etching for you).And, finally, I have no idea what they were trying to say with the last sentence, "Sex is of the highest standard." I don't think I'll even bother trying to guess on that one, but it certainly sounds like something a knife should have no business trying to promise.
This is probably one of -the- sharpest knives I have. If it keeps its edge, then this is probably going to be my new "go-to" chef's knife in my kitchen. While I may not be a professional, I can definitely tell the difference between this and other knives so far. Will keep this updated over the months depending on the edge/how it takes to the grind. To start though, best knife yet.
This Howashin Chef Knife is pretty dang nice. The blade has a really beautiful Damascus finish that really sets it apart from the other traditional knives I have had from Wustoff and Henckels. The blade comes in a nice presentation box along with a tip protector. I'm keeping the box as I don't want this knife to ever come into contact with other knives if we were to move. The only nit I had was that the handle feels a bit light to me compared to other knives. I like the heft of a nicely weighted handle as it helps with balancing rocker cuts The handle is also made out of wood (and light at that) so there is no way this knife should ever be placed in a dishwasher as the handle will absolutely crack and fall off. The knife is also a bit on the pricey side. I cannot tell if this knife was hand forged or not but the price point would seem to indicate it is. Overall I'm a fan and would rate it at 4/5 stars for now. I'll update this review once I have some longevity to report.
