Solid knife, not as nice as some of my other Japanese knifes, however very good value and will serve anyone's cooking requirements.
I've been a gourmet high end meat cutter/ chef for 43 yrs.These are my new favorites i love the blade quality. And the handles are perfect. I love the Island colors. Great balance in your hand. I know blades, these Arnett impostors. I got 7 from this company, and I am super impressed.Buy them all, be careful there not toys there dangerously sharp.
I've noticed the reviews on this knife vary based on the model. The damascus version seems to have pretty high marks, and looking at the differences, I can see why. I got the stainless version, and the fit and finish don't seem to match the pictures of the damascus version.The blade itself is made well, and is absolutely razor sharp. 440C is a good stainless, and will hold its edge for quite a while, but will need brightened up with a steel frequently (depending on how often you use your knife, of course). This knife is no different, and as long as I maintained the edge, it retained that razor sharpness.The biggest problem is with the handle. The resin part of the handle is a cheap, plastic-y resin (which should have been a heavier type to help counterbalance the weight of the blade), and there is a thin metal cap on the front of the handle that has no place being there. It's like the blade was made in one place, and then it was shipped off to some other manufacturer that didn't care. The different sections of the handle weren't worked together, so there is a noticeable ridge between the different parts, making holding the knife kind of unpleasant. In some areas, there are gaps between the different sections. Quite honestly, the handle is pretty amateur-ish, and has no business being on a blade like this.Just based on the pictures, I'd recommend the damascus version. Stay far away from the stainless version.
I wasn't exactly blown away by this knife at first, but after a couple uses, it proved to be a decent performer. The blade is great for "chef's knife" usage and cuts well, it really comes down to how you feel about the handle. It's pretty to look at and I imagine it is quite durable, the look just doesn't really do it for me, but that's a matter of personal preference. Something to note if you DO love the look, the maple and resin in the handle have different textures. Mine arrived with pretty much all wood at the front of the handle and all resin on the back half so I feel resin in the hand and wood in the fingers. I'm being pretty nitpicky, it's not that big of a deal, but something to consider. The blade is excellent though. Even if the appearance bows to the fancy handle, it's kind of a unique shape and cuts/cleans beautifully. If the handle is ok for you, this seems like a nice knife!UPDATE: Woops! After posting this, I realized that there was an issue when I ordered this knife and I did not receive it (but somehow I could still review it). What I have reviewed here is a "Zlatko" branded knife that I ordered a few days later that I am 99% sure is the exact same knife. I am leaving this review because these appear to be the same thing. The prices and specs are the same and if you look closely at the item images, they are of the SAME knife (same handle!). I believe I have reviewed the same product, but from a different seller, and I will apply the same review to the Zlatko knife!
Well packaged, knife is extremely sharp and the grip is very comfortable. Highly recommend this purchase for performance and value!
This is a nice knife, but it is certainly anything but sharp. It will make mush out of a tomato if you do not first take a sharpening steel to it. As mine arrived, you could safely bounce it against your skin without getting cut. When taken to a tomato, it would not cut, but would squish it. After taking a few minutes with a sharpening steel, there was a world of difference. It now easily slices tomatoes without a lot of pressure. Do NOT bounce it against your skin now unless you want to cut it.The handle is an odd color, but it looks nice. The handle is not molded for your hand and can be slick when working with a moist meat or fish. Using a knife towel takes care of most of that. The shape of the handle is sort of an octagon which keeps the knife from rolling, but not from slipping.The weight of the knife is a bit light for my taste, but it holds up well and does not flex unless you place a lot of pressure on it.If you want to add this to a butcher block knife holder, you will need a wide slot for this to fit. It does come in a presentable magnetic closure box that can be used for storage in a bind. That would be a hassle though if you use your knife much.It is a reasonable product for the price.
