A very good knife!
Need to be sharpen more often to do the job .
This knife is a really good quality knife. It cuts through vegetables like butter and since its all one solid piece of metal its really easy to sharpen and clean. The balance of the knife rests right where the handle meets the blade, so its a really good knife for chopping and cutting.
I've been looking for a chef knife for a while now and decided to give this a try. This gets the job done. It is sharp making this a safe knife to use. It is very versatile. I don't find myself struggling to cut fruits or veggies which is nice. This makes cooking a lot less stressful.
I bought this for my boyfriend who has worked in kitchens most of his life. He loves it and says it's lightweight to use, yet cuts solid. It looks durable and nice. He likes that it's one solid piece instead of having an attached blade to a handle, so the blade won't loosen from the handle. It cuts right through things with no effort. I like it so much I'm thinking of buying more for gifts for family members this year.
I was not much into cooking but this pandemic has changed that. It also made me realize how important a good knife is to the cooking process. I ordered this knife for it slick, shiny looks, but have fallen in love with how sharp and effective it is. Whether slicing through veggies or meat, the knife is just amazing. I would highly recommend it.
I've been fortunate to own quite a lot of knives in my life from cheap garbage through to low- and high-end Henckels, to Global, to Mercer, and to Shun.First off, I deduct a star for calling this MATTSTONE HILL which sounds English, but it's just Made in China. Surfing, I could only find MATTSTONE HILL SINCE 1979 in a US Patent Office filing in November 2019. Definitely not 40 years+ and more like just 1. Anyway, it's just some generic Chinese knife. The whole "story" is laughable. I hate misleading marketing.It says that the blade is made out of X50Cr15Mov forged "high-carbon" German stainless steel. X50Cr15Mov is not a high-carbon steel, but a typical (good) steel used in a lot of German knives. It dulls fairly easily, but also sharpens fairly easily. The dots in the handle seem reminiscent of my Global knives but with a lot less grip. The weight and balance of the knife are good.The blade grind angle of 15 degrees is just misleading as it looks just about a typical Henckels or Mercer angle. Definitely not Shun sharp, and I doubt that such a soft steel could handle such a thin angle. It's not a 15 degree knife along with all the other marketing hyperbole such as lasting, razor sharp, ultra sharp, superior, etc. It's just not, but it's not a junk knife, eitherIn actual use, the knife is decent as long as you don't expect it to be high-end like the description would lead you to believe. It just doesn't feel or cut special, but it is a good value, and there are many no-name Chinese chef knives in this price range. This is a big chef's knife at 9". I am more used to smaller and more nimble 6" and 8" ones.I give it 3 stars for its value -- in other words, nothing special nor a must-buy. The marketing misrepresentation is pretty bad. I would probably recommend a Mercer chef's knife over this for a little bit more money. I particularly like the rubberized Genesis grip over this, especially on such a big knife.
