Incredibly sharp and well made knife
I have been needing a good boning knife for a while and decided to give this one a try based on the reviews and the price. I am so glad I did. This knife is seriously impressive.Right out of the box, the blade is razor sharp. I am not exaggerating when I say it glides through meat like butter. I used it to debone a whole chicken and it made the job so much easier than the old knife I was using before. The 6 inch blade is the perfect length for getting into tight spots around joints and bones. I picked this knife up on a bit of a whim, mostly because I needed something better for trimming meat and breaking down fish, and I wasn’t expecting much at this price. Deceptively agile
I love Pakkawood, and it looks great on the handle of this knife. Classic without being stodgy.The shape of the handle is also quite nice. Easy to hold. A little on the slippery side, but sometimes there's a cost to beauty.It's 'high carbon stainless' steel, which isn't something I'm familiar with. Stainless is easier to care for; high carbon is easier to sharpen, but susceptible to rust. I've always thought you had to choose between the two. Apparently not.It's extremely sharp out of the box, and so far I haven't had to sharpen it, or even hone it on a steel.The blade is more flexible than it looks, given its thickness, and the full tang. Also lighter than it looks. It allows for very agile cutting. I haven't used it for fish, but for chicken, pork chops and roasts, and the other things I've cut up with it, it's worked very well. In the near future, I plan to debone a whole pig with it, and I expect it to perform admirably. It's a very welcome addition to my stable of knives.I was actually surprised, given its quality, to go back and find out how inexpensive it is. If you need something like this (and who doesn't?), get one for yourself, and one for a friend.
