These baldes are nice and thin and hold a great edge. I did three whole pork loins and the breakdown knife as well as the boning knife maintained their edges and cut so easily compared to what I was using before. This is a great knife set for the price and I am looking forward to getting a lot of use out of them.
I purchased this set for my Christmas dinner, since I was making two prime rib roasts and a bone-in ham. The boning knife was perfect for cutting the ham from the bone. The knife has a good weight and balance to it, it’s very sharp, and it feels sturdy in the hand without the blade bending or wobbling.The slicing knife was perfect for the prime rib roasts. Each one was more than 9 pounds, and my other knives were not long enough to make slices evenly with one cut. This blade was perfect for it. It is very sharp, and it was great for making even cuts. For the length of the blade, it felt very sturdy without any bend. I looked at other sets that were more expensive. But I’m glad I got this. It was perfect for what I needed for Christmas, and I’m sure I’ll get a lot more good use out of it.
These are pretty good knives and are very sharp. I did have to hone them as the edge was folded over a little. I bought this as a gift, but I already had the slicer from this set for myself. For the price they are very nice and I don't feel bad putting them in the dishwasher. Just make sure you hone them every now and then and they should last a long time and stay pretty sharp. My slicer has been used for several holidays and many briskets/roasts and slices nice and thin as long as I hone it.
I was not sure if I would like these knives since they were not several hundred dollars. The knives were extremely sharp when I git them and have held their edge well. They stay sharp and work amazingly. I have bought the knives for family as a gift and would buy this brand for myself again
