Like cutting food with a samurai sword
These are expensive. I've had some pretty nice kitchen knives (e.g., Wusthof), but I've never splurged like this before. Now I'm wondering why I waited so long.Are these really the 'sharpest knives under the sun'? I don't think that's a testable claim. But they're wicked sharp out of the box. A 12 degree edge gives you that.I've never heard of V12 Ultra steel before. But it's supposed to be an improvement over VG10 steel, and I like that a lot. It has a Damascus pattern, which is to say, it has a kind of dreamy beauty to it, like the flow of water around rocks in a stream. And my understanding is that folding it into layers upon layers is how the Japanese gave their katanas such an amazing combination of sharpness and hardness. I guess in a sense, cutting with this feels a little like using a samurai sword.The shape of the chef blade and handle are classic, and lend themselves to using a rocking motion to cut meat or vegetables. The shape of the paring blade and handle are unusual, and the paring knife actually looks more like a weapon than a cooking knife. But it handles well. Both blades let you make extremely fine cuts.Although they're larger than the knives they replaced, they're lighter.I found it a little odd that the knives come with leather sheaths. The design of the sheaths is clever. For the chef knife, a little bar behind the heel keeps the knife from being unsheathed until you remove it. The sheath for the paring knife has the same design, but there is no heel to catch on, so on that sheath, it's just cosmetic. I actually wonder a little about the possibility of dulling the blade by bringing it into contact with the bar. But I put the sheaths away, so I'm not really worried about it. They're on a magnetic holder in my kitchen, where I use them daily.If you cook every day, and if you can afford them, these are great knives to have.

Stunning knives — razor sharp - a work of art!
These knives are incredible. First thing I noticed was the packaging — absolutely beautiful and easily nice enough for gift giving - and the included leather sheaths are a great touch. When you open the box, each knife looks like a piece of art. Honestly, you almost feel bad cutting anything with them because they’re that good-looking.But they’re not just pretty. They are extremely sharp, very well-built, and feel balanced and comfortable in the hand. Using them feels smooth and precise, and they’ve quickly become my favorite knives in the kitchen.If you want something that performs great and also looks amazing on display, this set is a winner. I will always hand wash these knives - they are not dishwasher safe. But this makes me appreciate them even more. They are definitely not cheap - but they are a great investment. I have a Global chef knife that is supposedly one of the top rated chef's knives - I reach for the Dalstrong every time now - it beats the Global in every way.

These blades mean business
This chef and paring knife set is absolutely incredible! Hands down the sharpest blades I’ve ever owned. Out of the box, the edge is laser keen and glides through ingredients with zero drag. I can slice tomatoes into paper thin, translucent rounds without squashing them and chiffonade herbs so cleanly they don’t bruise. The chef’s knife makes quick work of dense foods like squash and sweet potatoes, while the paring knife is perfect for delicate tasks like hulling strawberries, peeling, and precise trimming.Both knives feel beautifully balanced in hand.
