Everyone's right....these are very nice knives!

Looked around and read a lot of reviews for a good fillet/deboning knife. I am into smoking meats, mostly whole packer brisket and I currently spend a lot of time trimming the meat in preparation. I wanted a good knife that would speed up this process. First, this knife comes beautifully packaged in a nice box with sheath, care instructions and a couple "Dalstrong" trinkets. The knife has good weight and balance, the blade is strong yet flexible and comes pretty sharp. Can't tell yet as to the durability of the edge, but the grade of steel would indicate that it should last as long or longer than most other knives. For the price, this is comparable to a Wusthof that is 2-3x the price.

Great steel for a steal.

I bought this knife out of nesscesity but I was also pretty cash poor at the time so my options were limited for something with in the realms of a “good brand” so I was taking a chance for sure as you do with anything you can’t hold immediately especially those of us who have “instant gratification” problems. However when this knife came in and I finally got around to opening it I was happy to hold it in my hands. It is important to say that this “Phantom” series might indeed be there best series. The weight is good the steel is very nice not too stiff but not with out give, firm and sharpens easy and well. The Handel is kind of built like a shun with the beble like in the DM series but wider which I find much more comfortable because it allows my grip to relax. Using this knife is very comfortable and it has helped me because of its style of blade. It makes filet chains and monk fish trimming an, well almost enjoyable experience all and all I can say that this knife is what a cook in a kitchen needs and I think overtime it will prove durable for many years to come.

HOLDS A SUPER EDGE

I always "sharped" all my knives before I use them. This knife was very sharp, but not to my standards ("if you touch the blade at all, you'll get cut" type sharp. I have several Dalstrong knives and have been very happy with each of them. I have had Japanese steel knives (not the super expensive ones, but high quality) for a long time and appreciate a fine well made knife. Previously I was buying the Dalstrong German steel knives, but after getting this knife I will be getting all Japanese steel knives from Dalstrong from now on and definitely with the Pakkawood handle. After sharpening & stropping to a razors edge, I "butchered" a full beef tenderloin effortlessly and was very pleased how well it handled the silver skin especially, What was more surprising to me was the Pakkawood handle, with fat & grease all over and on my hands the knife stayed in my hand without slipping at all. Great knives at a reasonable price, my new go to for blades

Surprisingly good quality for the price

Very glad to have made this purchase. The DALSTRONG Boning Filet Knife came packaged in a very nice flip open box including instructions, cleaning cloth, padded snap close blade protection sheath, and of course the beautiful boning knife with Pakkawood handle.The blade came sharpened and polished, with clean hollow ground indentations. The blade has a nice stiff flex feel which lends itself very well to its purpose. Boning a whole chicken, and filleting a full length fish both felt very comfortable and controllable as should be the case with a quality knife.I am very pleased to find the quality comparable to some of the more expensive brands of kitchen knives, at the price point more affordable to the every day person.

Great knife for the price - used in retail seafood

Used in retail seafood department in the Pacific North West - Atlantic, Sockeye, and Coho Salmon. Excellent workmanship - the handle design modeled after much higher priced knife companies from Japan - a real joy to use after eight hours - hand no longer aches from straining. Keeps a sure and comfortable grip. Solid construction - absolutely flawless execution from tip to butt. I can remove the ribs with surgical precision which is the primary function of this knife for work. On smaller fish I can filet them completely, but on anything bigger than 9 pound salon I prefer a blade that is longer and has a thicker spine. Knife arrived sharp but I was able to improve sharpness with a little 3 minute session on a 1000 grit stone and a steel for honing. No big deal. Steel is excellent quality and requires light honing after a busy day to straighten the blade. No need to sharpen it after two months. Only four stars because the enclosed knife sheath won't stay closed and it doesn't completely cover the entire blade. I think a scabbard/sheath would have been a better idea instead of a open and close presentation style "case/sheath". Reading materials that came with knife excellent. While primarily slicing fish rib cage meat it does its share of cutting through fish spines and scales. Good knife for the price. A keeper.

Sharp, great weight

I’ve used this knife a few times now in prepping meats for the smoker. It feels great in the hand and slices through even the thickest fat layer as if it were butter. Word to the wise — do not be in a hurry when using this knife! I’m typing this review after a trip to urgent care a couple of days ago....I slipped and sliced my thumb open.....I now have stitches to remind me of my lesson learned! I can’t speak to others’ experience with this knife —- but the one I received is RAZOR SHARP, so take that for what it’s worth. Happy trimming, and be careful!
