Great Sharp knife that holds an edge.
This is the second Dalstrong knife that I have gotten. It’s really sharp, holds an edge for a long time, and looks really good. If you want a quality knife that isn’t going break the bank like some then this is the knife brand to get.

I have never been happier with a kitchen knife
The Dalstrong 6" Shogun Series Boning knife is an extraordinary instrument. Beautifully balanced and surgically sharp, the knife glides through its work and sits comfortably in the hand -- and that's one of the knife's distinguishing characteristics. The robust handle contributes to the ease of use. But there are other features worth mentioning, not the least of which is appearance. The craftsmanship of this knife makes it as attractive as it is functional. Sitting on a cutting block, its classic design easily attracts attention. And Dalstrong's customer service is as good as its product. My questions and concerns were answered promptly and in detail. This is certainly the first of many Dalstrong knives in my kitchen. Please keep in mind that I am a verified customer, not a product tester. It's without hesitation that I recommend this product. I give it five starts only because Amazon doesn't allow for a higher rating.

More than a fillet knife
If you're looking for a stiffer than average fillet knife, this is perfect, buy it, you wont regret it. I have found that it's also completely awesome as a relatively large paring knife in the kitchen, and once I used it there, I realized that's where it needed stored. It's now one of my most used kitchen knives. For light tasks such as fine chopping and mincing, thinly slicing, piercing, deboning, etc., this knife is superb. The knife looks beautiful on the magnetic block but more importantly, it's extremely well balanced, stays very sharp reasonably long, cuts through about anything effortlessly, releases foods well due to the Damascus texturing, and is very easy to keep razor sharp with a steel and ceramic rod due to it's fine grind and thin blade geometry. It's a nice fillet knife, but if that's all you use it for, take it to the kitchen, you're gonna love it even more.

Best kitchen knife I have ever held!
Honestly, I do no cooking, only eating. But my 38 y/o son, who is a chef, started purchasing these knives on recommendation of another chef. He has been so satisfied with them that he'd like to own the whole set, so for Christmas this year we bought the boning knife for him. He washed it right away, went out and bought two whole chickens, and showed his mom (my wife) how to de-bone a chicken "the right way"; she hates wasting food. Working with Dalstrong has never been a hassle, never detected a hint of sarcasm from them, have always answered my questions courteously and respectfully. They say they are a small family business and it feels that way, too. The knives he owns are beautiful, well balanced, rugged. Makes me wish I was a cook . . . almost. :-)My son highly recommends them, would use no other. They are not the most expensive knife, and there are probably some with highfalutin features, but if you want a professional looking knife, which will last you for the rest of your life, and not break the bank, this is the set for you. Comes with a really cheap looking abs plastic sheath that has an extremely hard to use plastic retaining pin. I think ladies would need pliers to remove it every time.UPDATE: After 6 years of using this knife I love it.Pros-Can be sharpened to be sharper than any razor I've ever seen.Holds an edge for a very long time.Slices thick meat as if it were jello.Cons-Blade requires extra care since it chips easily.Requires a 1-inch belt sanding machine with proper belts and leather strop to produce the best edge.

Best Bang for Your Buck!
I have about 10 knives in my standard every day use rotation. For the money I think the Dalstrong is probably my top pick although I also LOVE just about anything by Yaxell (I highly recommend their ENSO HD series, they are a top performer, well priced and you'll probably be the only one you know that has them). Tojiro DP line is also a top bang for your buck pick and is a little sharper out of the box, but Dalstrong is MUCH better built and better looking. These Dalstrong Shogun knives handle an unbelievable amount of abuse and hold up.Dalstrong are very good looking knives. They seems to be a little heavier than my other knives, but being a larger fella I love the extra heft and I feel like I have better control. Dalstrong's handles are my favorite of all my knives. I end up using this knife more than others just because I love the feel of the handle. Edge retention is also very impressive on these.Forget about price, marketing, name, etc... which ever knife looks and feels the best TO YOU will probably be your favorite and most used knife. Dalstrong hits it out of the park in looks and feel FOR ME. You'll have to decide for yourself what you like.I rarely give a 5 star and what pushed Dalstrong into the 5 star is their customer service. TOP NOTCH! I seriously can't say enough good things about their customer service.
