I bought this for my husband. He's a deli manager, and a fabulous chef! He's been seeking out a 10' chef's knife for years (since he lost his favorite knife he had for over 20 years). I was nervous to order a knife online, but I took a chance on this one and he couldn't be happier.Straight out of the box, he said the weight balance was fantastic, it seemed sharp, and it was gorgeous. He was so happy, he refused to even test it until we bought a bamboo cutting board that was "worthy of it". Cutting board received, he was finally ready to test it out.He knows I'm not comfortable with slicing, and had me watch his first tests. After his first run through of chopping tomatoes, onions, celery, etc., he handed the knife to me. I DO NOT cut, chop, slice, or anything else! I've tried many times in the past, and felt uncomfortable every time. I gave this knife a try (just to make him happy at first). Now, I'm the one wanting to help with the prep work!The knife is VERY sharp! I was extremely nervous to use it at first until I actually did. I now feel my previous hesitation was due to having worked with your typical home knives that aren't as sharp or balanced. The precision of how I can slice now opened my eyes! I'm no longer scared (still respectful) of knives.Totally worth every penny! We're going to be ordering more from this line ASAP.

Any knife by Dahlstrong is absolutely well built, sharp, holds a sharp edge longer than any I've had, fits very well in my hands & I trim, cut, & slice very large meats. Not one of my knifes has lost its edge. Thickness of knife is great so you feel safe using it. It's on the higher end side of knifes but if you use knifes regularly you will completely understand why the price is what it is. A bonus is that their customer service is great & that is a very big deal for me. I highly recommend if you can afford a knife to try you just might buy a whole set & you won't be disappointed!!!
