Great knife, great value.

I have been looking for this style of knife for sometime as I do a lot of cooking and vegetable prep can either make cooking fun or a chore. Having a sharp well balanced knife is so important to what kind of cooking experience you’re goimg to have.I did a bit of shopping and thought that I would give the Dalstrong Nakiri a try. I’m glad that I did. I have only had it a week or so but it is razor sharp and is actually quite beautiful. Nice weight in your hand and well balanced, makes slicing and dicing all of those veggies a breeze. I also used it to cut up basil and cilantro to see if it would bruise the basil. It did a beautiful job.I haven’t had it long enough to say how the edge will hold up but so far, I could shave with this thing and anyone who cooks knows how important a sharp knife is from a safety aspect as well as making life easier in the kitchen.

A truly fine knife

It's a little early to leave a review, (we've only had the knife for several days thus far) but I will post at least a provisional one, and then update it later if there is anything left to add.First off, the Dalstrong Nakiri knife comes very nicely packaged.I rather felt that the presentation was very suitable for a high quality knife...so very nicely done there, Dalstrong.And now, the vital part: the knife itself.I consider myself somewhat of a knife 'buff' and this one pretty much checks all the boxes.It's very nicely weighted and balanced.It really feels comfortable in the hand.It comes with a very sharp factory edge (which I've already honed just slightly finer),and it's doing an excellent job on the veggies.Keep in mind that this knife has a pretty specific purpose.You could for example, utilize it for peeling carrots, and it would do the job, but that's not the sort of thing it's intended for.How durable is it, and does it hold it's edge?As always, time will tell.But for the present moment, I'm very pleased with my Dalstrong knives (I don't often hand out 5-Star reviews)and hope to add more of them to our future collection.

So far, so good. I am a former culinary school graduate that is not currently working in the business. But I am an enthusiast home cook and I spend much of my time prepping produce while trying to reduce my weight. I heard of this brand from Burrificiation on YouTube and I'd heard concerns on Reddit about the longevity of this line of knives (very hard hardness, hollow grind, narrow angle) but even people that questioned Dalstrong seemed to like the customer service. And the 4 month return policy convinced me to give it a try. And so far I'm happyI tried out a few Nakiri knives at Sur La Table and a local knife store (Phoenix Knife House in Phoenix, AZ). I wanted a nakiri since most of my food prep is vegetables (tomato, onion, mushroom, chilis, etc). I will say that this is the... beefiest of the nakiris I tested. It is heavier and a taller blade. Other reviews say it feels more like a Chinese cleaver and I'd say it does feel bigger than many Japanese style nakiris. But I have fairly big hands. And my only "nice" knife that I owned for years was a 7" Santuko from Miyabi. I was used to heavier knives and I'm not spending hours working on the line so I don't have to worry about fatigue. And the fit of this knife fits my hand perfectly. My wife has smaller hands and absolutely hates the feel of it. She prefers her 5.5" Shun Santuko. But for me this feels great and it looks great. Time will tell how it holds up but after a week or 2 of heavy use (at least for a home cook) it still has that out of the box edge.I've got a 200, 1000, and 8000 whetstone along with a leather strop and ceramic rod. So I should be able to maintain my edge well. I've run it on the rod a couple of times but have not messed with the stone yet. If I have any issues in the future I'll update. But so far I'm very happy.
