Love the long, slim blade for cutting turkey, large roasts, and hams. Not sharp out of the box.
I was looking for a good slicing knife, and found this one on sale, so I decided to buy it. I have other Dalstrong knives, and it seems getting a sharp knife out-of-the-box is the luck of the draw. The last Dalstrong knife I bought was not sharp, to I returned it rather than deal with it. This knife was also not sharp (the reason for the 4-star rating), but I decided to sharpen it since it was on sale. I used a Chef's Choice hand sharpener on the Euro slot and then did a few swipes on the honing slot. It sharpened quite well and was what I expected out-of-the-box.Considering the prices for Dalstrong knives, I believe they should be sharp when you get them, but this is not always the case. If you have a good knife sharpener, I suppose it's worth the effort to sharpen a new, dull knife, but you shouldn't have to.Other than this complaint, I love this knife. It works very well on large turkeys, roasts, and hams, and slicing thin slices is a breeze. The balance of this knife is very good, and it feels comfortable using it. These knives are very nicely boxed and would make great gifts. I comes with a great sheath that stays on to protect the knife blade if you keep your knives in a drawer.UPDATE 01/01/22:I also got the 14" cutting and slicing knife for Christmas, and I love it as well. This knife was very sharp out of the box. Since the blade angle on Dalstrong knives is 16-18 degrees and Asian knives are 15-17 degrees, these knives can be sharpened with a knife sharpener for Asian blades. This knife works great for large roasts and hams as a slice can be done with one stroke of the blade. The dimples on the sides of this knife help to prevent food from sticking to it. I really like this knife and the Spanish style slicer for different tasks.All Dalstrong knives come with a sheath to protect the blade when stored in a drawer. They also come with and attractive box for gifting. Although I do recommend the Dalstrong knives for the quality, if you happen to get a dull one, I suggest returning it for a sharp knife.I hope this review was helpful for you. Exceptional Quality Knife
Ordered my first Dalstrong knife. This 12” blade slicer is more akin to a small sword. That packaging was over the top in quality and appearance. I like the fact that the knife came with its own protective storage sheath. I bought it mainly to slice smoked brisket and whole bbq poultry. The knife has a little more flex than I desire, but this might be good for slicing salmon and such. The knife is very thin and narrow it’s entire length. I’m positive if you tried to use this as a butcher knife on raw meat with bone in you could possibly bend it. Other than that this is an exceptional knife in quality and value. Five stars for me.

Not for mortal combat...
Loved the little card inside the box that said the knife is not for mortal combat. Though if I had an intruder, it might still be a handy item. Knife is great. Though it is a meat slicer blade, I've probably used it on more watermelons than meat because of the length. Again due to the length, it resides in a different drawer than the other knives, but it's a small sacrifice. It comes sharp and does a great job.

Excellent balance, perfect blade width and easy to handle. This is a very nicely crafted knife. The blade thickness is very conducive to slicing fine meats. It will shave a Gyro loaf paper thin. On large birds and roasts its perfect. If they made one in a ten inch I would add it. Very well balanced with a good deal of weight in the handle to offset the 12 inch blade nicely. This is a fine knife in any theater.

One great knife
This is one great knife. We received a whole salted ham leg for the holidays last year and I wish I had bought this knife a lot earlier. We went to Spain on vacation and witness the art of ham (jamon) slicing first hand and everybody used knives like this, so I went on Amazon and found this one made by Dalstrong. I'm amazed at the quality. I don't see how spending three or four times as much would get you anything better. The quality of the steel, the handle, the packaging all are top notch. Nobody is allowed to use this at our house besides me.
