As a cafe’s prep cook in a very small kitchen, having a knife that is so versatile is a must and this one checked all the boxes. It is beautifully made, very sharp, well balanced, and slice cheeses and vegetables and salmon easily. This is now my favorite knife to use everyday.
I love this thing! I use it as often as I can and it is still sharp as hell! I am definitely going to be buying more of them!
I've been looking at the Deflector for a while and finally bought one since I find having veggies ride up the side of my knife very annoying. First off, the knife worked as advertised. I cut up a bunch of potatoes for soup and nary a piece rode up the blade, they all fell off cleanly to the side.Second off, the fit and finish my Deflector is excellent. I bought the Gladiator 7" Santuko a number of years ago and was pleased with it's heft but there were minor fit and finish issues. While it's handle looked fine, I could feel spots were the metal rivets and tang weren't flush with the handle material. Also, the part were the bolster met the edge of the blade was a bit crude. Nether were serious enough to return the knife but were noticeable. On my Deflector, the entire handle was perfectly smooth and were the bolster met the blade edge was very refined.Third off, I had some concerns with the design of the deflector that kept me from buying it right away. In the photos of the knife the cut out sections of the blade have hard corners. Such corners in metal are a big no-no since they focus stress and can cause cracks. Granted that shouldn't be an issue with this knife unless you beat the hell out of it. Also, there were some complaints in reviews about the edges of the cut outs and ridges were too pronounced and caused irritation with some people's hands. Much to my surprise the Deflector I received was noticeably different from the photos. The cut out corners were rounded and the ridge edges were smoothed over. Kudos to Dalstrong for fixing those drawbacks. I suggest they replace the existing photos in their ads with photos of the upgraded version.I'm very pleased with my Deflector and it will be my go to knife when chopping up bunches of veggies.
I like the openings in the blade but I didn't care for the shape of the knife. I think I prefer a Japanese knife shape with holes near the bottom half. That way root vegetables would not stick to the blade but you can still hold the vegetables down using a cat's paw position. You would also have more blade to cut down on the vegetable as opposed to using the second half of the blade closest to your hand for slicing. The knife is well made I just wish the shape of it we're not so close to a chef's blade as opposed to more rectangular shaped blade with more cutting surface. That way you could cut potatoes and turnips and anything that's wide or thick straight through without worry that the blade creates a suction on the root vegetable.
This is my second Dalstrong knife, I bought the chef’s knife first. The vegetable knife works great, the slices don’t stick to it and it is super sharp.
My sons favorite knives. This was a Christmas gift!
This vegetable knife outperformed my expectations. I sliced 5lbs of onions and 10lbs of potatoes without anything sticking to the knife. Only downside for myself (And it's just me), was the blade was a little thin. Other than that, I am throughly happy with this knife. Fyi. I love the gladiator series (Personal preference).
