This pan is a game changer

I bought this pan for my husband for Christmas after we had learned how to use stainless steel pans on social media (thanks Steel Pan Guy). It cooks beautifully when used correctly. The fact that meat sticks until it's "ready" is so helpful to know, it truly has changed how we cook. The pan feels very heavy and sturdy. I do wish that this pan was solid construction because it does have a sort of plate at the bottom (not all one piece) but it is still useful and a good intro pan. We are able to make meat and use the fond for pan sauces and it has us eating like we're at a 5 star restaurant often. It is that good. Once you know how to use it right, it is life changing.

Teflon vs Stainless Steel

Im trying to get away from Teflon, I try to heat this pan up slowly and follow directions. EVERYTHING sticks - Im flying through tons of Olive Oil and my fish is torn up when I remove it, forget eggs - I even tried scrambling but 1/2 the eggs batch ends up stuck on the pan. Im glad I only bought two skillets.

New go to pans.

Bought to replace an aging nonstick after wife pointed out toxins in aged nonsticks. The 10” is the go to while the 12” is saved for preping larger meals. If preheated and cooked with oil or butter clean up is a breezy. Bar keepers friend is your friend for removing the bronzed/golden over heated edges that I find often with my propane range.

Does what it advertises

I own a lot of very good non-stick pans, but this has become my go-to pan for frying chicken breasts, salmon and white fish. Haven't tried it with eggs yet but it does breakfast sausage admirably. It is so nice to pour oil into this pan and watch it gather in a pool in the middle of the pan instead of running off to one side. My only problem, not having used stainless steel pans before, was heating properly before adding oil. I was using a laser thermometer, and the pan didn't seem to be heating up very fast on my induction stove. As a consequence, the pan was overheating, sometimes to over 600 degrees. The thermometer was giving me a false reading. When I finally figured out my error, things have been fine. I do love this pan and will consider Deluxe cookware if the need arises for another piece of stainless steel cookware.

A fancy steel pan, with a flimpsy handle.

I purchased this pan since it's supposed to work great with electric stoves. I like it's feature to draw liquid to it's center and it is very nice cook with it, as long as the right heating temp is set. The higher the heat, the harder it is to keep it clean or to cook stuff without getting messy and sticky. One thing that I didn't like, was the pans handle. While it does feel sturdy, they way it's attached, up or down motion/pressure will move the handle to much. Almost as though you could easily damage it.Other than than that, It's an alright pan. But too pricey in my opinion.
